Manadonese Style of Corn Fritters


Manado is the capital city of North Sulawesi
in Sulawesi Island, Indoesia

One of my favorites is the corn fritters.

Ingredient:

200 grams of sweet corn kernels
1 cup of plain flour
1/2 cup of rice flour
1 block of chicken stock
6 pcs of kaffir lime leaves, thinly sliced, removed the stem
1 spring onion, thinly sliced
salt and pepper
cold water as needed
1/2 tsp baking powder
Rice Brand Oil for frying
Method:
Mix plain and rice flour with water, until get the right consistency (not too thick)
Add corn kernels, chicken stock, kaffir lime leaves, spring onion, salt and pepper.
--You can add slices of chilli or chilli flakes, I didn't use it--
Mix all really well.
Prepare oil in the pan, take one tablespoon of mixture and fry it.
Continue until finished.
