Spiced Meatballs and Tofu Soup




Spiced Meatballs and Tofu Soup


Ingredients:
300 gr minced turkey
1 tsp of coriander powder
1/2 tsp of salt
1 block of tofu, cubed
1 carrots, thinly sliced
2 celery stalks, chopped
1 small garlic, bruised
1 tsp of whole cloves
1 whole nutmeg
1 whole cinnamon stick
1 green onion
1 bunch of choy sum, chopped
1/2 tbsp of MASSEL chicken stock powder
about almost 1 litre of water
fried shallots





Method:

Fill a small sauce pan with almost 1 litre of water,
add bruised garlic, nutmeg, cloves, cinnamon,
chicken stock powder,
celery stalks, green onion, carrots,
bring to boil.

In the mean time mixed together:
minced turkey, coriander powder and salt,
then form balls, keep in the fridge until water boiled.

Once boiled, add spiced meatballs,
and add cubed tofu too then
bring to boil again until meatballs completely cooked.

Scoop out green onion and garlic.


Serve with steamed jasmine rice,
garnish with fried shallots.

Meat and Prawns Fried Meatballs

I love fried food :-)
This one if one my family favorites.
Be good if I can put some chopped fresh chilies or chili powder,
but if I did that, my toddler couldn't enjoy it.
So if you love it spicy, just add chilies :-)

Here is the recipe

Ingredients:
250 gr of minced turkey
-> you can use other type of minced, like beef, 
but minced Pork or Chicken will work well with this recipe <-
250 gr peeled prawns, deveined
2 - 3 tbsp of corn flour
1 egg
1 tbsp of fish sauce
2 tbsp of fried shallots
2 green onion, thinly sliced
salt and pepper to taste


Method:

Put prawns in the food processor
and blend until form a paste.
Move it into a bowl, the rest of ingredients except corn flour,
add a tbsp of corn flour at a time,
you don't want to put too much corn flour into it.
Mix all together, form balls with 2 spoons,
Or you can oiled your hands before you form them into balls.
Preheat the wok in high heat, add enough oil,
fry them but don't put too much in one go,
fry until golden brown,
drained on strainer or kitchen paper towel.

Served with sweet chilli :-)

Quick and Easy Minced Beef

Ingredients:
250 gr of lean minced beef
1/4 brown onion, thinly sliced
1 can of Italian diced tomato
2 sprigs of thyme
3 tbsp tomato paste
2 tbsp of Worcestershire sauce
sea salt, cracked black pepper and a touch of sugar
2 tbsp rice bran oil
a bunch of parsley, finely chopped

Method:
Heat pan, add oil, add brown onion, sautee until soft.
Add minced beef, sautee until cooked,
Add tomato paste, cook for about 2 minutes.
Add diced tomato, thyme, worcestershire sauce, salt, pepper and sugar.
Mix well and cook for about 2-3 minutes further.
Add chopped parsley, mix well and switch off the stove.

Ready to serve.

Quick and Easy Minced Turkey

Ingredients:
250 gr of minced turkey
2 tbsp of rice bran oil
1/4 brown onion, thinly sliced
200 gr of fresh button mushroom, thinly sliced
1/2 bunch of coriander, chopped
2 tsp of basil pesto
sea salt and ground white pepper
3 Piquillo
about 1 cup of crispy fried bacon


Method:
Heat the pan, add oil, then brown onion,
sautee until soften, add mushroom, sautee until cooked.
Add minced turkey, sautee until cooked too.
Then add basil pesto, piquillo, bacon, little salt and pepper.
Mix well, cook for 1-2 minutes further.
Then add chopped coriander, mix well and switch off the stove.
Ready to serve with steamed jasmine rice or sour dough.

Mexican Meatball Skewers and Rice Salad

I made this for our dinner last night. 
Nice and light meals recipe from Super Food Ideas Magazine.
In the magazine it says "Low Saturated Fat and Lower Sodium".

I did not use the Mexican chilli powder, otherwise my 20mo old son won't be able to eat it.
He enjoyed this dinner, although it was more playing with food than having dinner :)



Mexican Meatballs Skewers

Ingredients:
12 bamboo skewers, pre-soaked
550 gr lean minced beef
I used mince turkey instead
1 egg, lightly beaten
1/2 cup fresh breadcrumbs
2 tsp Mexican chilli powder
1 garlic clove, crushed
I used garlic powder 
1 tsp ground coriander
3 green onions, thinly sliced
250 gr cherry tomatoes
1 medium yellow capsicum, cut into 2.5cm pieces
I used red one instead, couldn't find a yellow one yesterday :-)
Rice Bran oil cooking spray


  Method:
Combine all ingredients in a large bowl.
Mix well and roll 3 tsp of mixture.
Put 2-3 drops of oil on your palms
so the meatballs mixture won't stick on your palms when you roll them.
Thread them into the pre-soaked skewers, alternately with tomatoes and capsicum.
Heat greased barbeque plate or chargrill over medium heat.
Spray meatballs skewers with spray cooking oil.
Cook, turning occasionally, for 8-10 minutes, or until cooked through.

Rice Salad

Ingredients:
3/4 cup long-grain rice, rinsed
1 cup frozen corn kernels
125 gr can kidney beans, drained and rinsed
3 green onions, thinly sliced
2 tbsp fresh chopped coriander
2 tbsp lemon juice
1 tbsp olive oil


Method:
Cook rice in a saucepan of boiling water following packet directions until tender,
adding corn for the last 3 minutes.  Drain. Refresh under cold water. Drain.
Transfer to a bowl, add beans, onion and coriander.
Combine lemon juice and oil in a jar. Season with salt and pepper. Secure lid. Shake well.
Drizzle over rice mixture.  Toss to combine.

I did not follow this instruction.  I cooked the rice in the rice cooker instead until fully cooked.
I put the corn kernel in a bowl, and pour hot boiling water into the bowl.
Then I let it sit for 10 minutes, then drained.
Put the rice, corn kernels and other ingredient into a bigger bowl.  Mix them well.

Minced Turkey, Japanese Tofu and Bean Sprouts


Ingredients:
300 gr of minced turkey
4 cloves of garlic, minced
120 gr of bean sprouts
1 block of Japanese Firm Tofu ("Morinaga" brand), cubed
Plain flour, as needed
1 tbsp of oyster sauce
1 tbsp of mirin seasoning
1 tsp of salt
pepper


Method:
Flour cubed tofu (just to cover the tofu and not a thick flour coating)
pan fry them with oil until golden, set aside.
Heat oil in a pan, add garlic and sautee until fragrant.
Add minced, sautee until color changed.
Add oyster sauce, mirin seasoning, salt and pepper.
Mix well, then add bean sprouts.
Sautee about 30 seconds.
Switch off the stove.
Garnish with spring onions.

YUM!!






Minced Turkey in Teriyaki Sauce






Minced Turkey (and Green Peas) in Teriyaki Sauce


Ingredients:
250 gr of minced turkey
5 cloves of garlic, minced
1 cup of green peas
1 red chilli, thinly chopped
2 spring onions, thinly sliced
1 tbsp of oyster sauce
3 tbsp of teriyaki sauce
1 tbsp of sugar
pepper
+/- 30 ml of water


Method:

Heat oil in a pan, add garlic and sautee until fragrant.
Add minced, sautee until color changed.
Add green peas, oyster sauce, teriyaki sauce, sugar, pepper, and water.
Mix well, sautee for 1 minute further.
Switch off the stove, add spring onion and mix well.
Easy ;-)  Enjoy :-)

Our Simple Dinner: Sautee Turkey Minced and Wombok

and
Manadonese Style Corn Fritters



Sautee Turkey Minced and Wombok

Ingredients:
1/4 of wombok, thinly sliced
3 garlic, thinly sliced
Green peas
1 block of chicken stock
salt and pepper
1 tbsp of oyster sauce
1 tbsp of light soya sauce
1 tbsp of Rice Bran oil


Method:

Heat oil in a pan and sautee garlic until fragrant.
Add wombok and green peas, sautee for 1 minute.
Then add oyster sauce, light soy sauce, chicken cube, salt & pepper.
Mix well and continue sauteing until all cooked.

Steamed Rice Noodle with Minced Turkey and Shiitake Mushroom
Kwetiaw Rebus dengan Cincang Ayam Kalkun dan Jamur Shiitake


Ingredients:
200 gr dry rice noodle
Bean shoots
Pak Choy
Minced Turkey
Shiitake Mushroom
4 garlic, minced
2 spring onion, thinly sliced
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp sugar
50-100 ml water
2 tbsp rice bran oil
ground white pepper
 1 cube of chicken stock (I use "OXO" brand)
for garnish: tong cai / tang chai / tianjun vegetable




Method:
Heat oil, add garlic sautee until fragrant.
Add shiitake mushroom and minced turkey.
Once cooked, add oyster sauce, sugar, soy sauce, white pepper.
Mix well and add water.
Taste to adjust the seasoning.
Switch off the stove.


Boil water in a pan, add 1 cube of chicken stock.
Mix well and add rice noodle.
Cook rice noodle according to instructing in the package.
Mine only take 5 minutes in boiling water.
Strained, put them on the plate.
Then use the same water, boil pak choy and bean shoot for about 1 minute.
Strained, put them on top of the rice noodle.
At last put minced mixture on top of vegies.
Garnish with tianjun vegetables.

Ready to serve.

Mix well before eating.

Bacon and Herb Turkey Rissoles with Pineapple Salad


I adapt this recipe from Super Food Ideas Magazine, April 2010 edition.

This recipe serves 4.

Bacon and Herb Chicken Rissoles
(I used Turkey)

Ingredients:
500 gr turkey mince
1 egg, lightly beaten
1 garlic clove, crushed
(I finely chopped the garlic)
3/4 cup fresh breadcrumbs
2 tbsp finely chopped chives
2 tbsp finely chopped fresh basil leaves
(I used parsley instead)
1/3 cup barbecue sauce
8 rashers middle bacon
(I used shoulder)
Olive oil cooking spray

Method:
Combine mince, egg, garlic, breadcrumbs, chives, basil and half of the barbecue sauce in a bowl.
Shape into eight 2cms-thick rissoles.  Remove 'eye' piece from each bacon rasher and wrap in plastic wrap.  
Freeze for later use***
Remove and discard rind from tail pieces of bacon.
Wrap 1 piece bacon around each rissole. Secure with a toothpick.
Preheat oven to 180C or 160C fan forced.
Spray a large non-stick frying pan with oil.
Heat over medium heat.
Cook rissoles in batches, for 1 - 2 minutes or until browned.
Transfer to a greased baking tray.
Brush with barbecue sauce.
Bake for 8 - 10 minutes or until cooked through, basting with remaining barbecue sauce halfway through cooking.


*** TIP: freeze uncooked rissoles in an airtight container for up to 2 months.


Salad from the Magazine is:
Ingredients:
100 gr baby spinach
100 gr red grapes tomatoes, halved
100 gr yellow grape tomatoes, halved
2 tbsp olive oil
2 tbsp red wine vinegar
1 tsp dijon mustard

Method for Salad:
Combine spinach and tomatoes in a bowl.
Place oil, vinegar and mustard in a screw-top-jar.
Season with salt and pepper. Secure lid. Shake to combine.
Add to spinach mixture.
Toss to combine.



My Pineapple Salad

Ingredients:
1 cup green peas, boil until soft, drained
100 gr red grape tomatoes, halved
1/2 small can of pineapple slices, drained
1 tbsp of chopped parsley
2 tbsp good olive oil
1 tbsp lemon juice
sea salt and black pepper

Method:
Mix all ingredients together.

Malaysian Roti and Chili Con Carne

I used prepared sauce from "Old El Paso" brand,
only need to heat oil, add sliced brown onion,
once translucent, add minced,
cook until color changed then pour in the sauce.
Bring to boil.

Egg, Minced and Coriander
Ingredients:
3 eggs, beaten well
250 gr turkey minced
3 spring onion, chopped finely
2 garlic, minced
1/2 onion, chopped finely
1 heaps tsp of ground coriander
1 tsp chicken powder (i use MASSEL)
1/2 tsp salt
1/2 tsp pepper
2 tbsp oil
Method:
Mix beaten eggs with spring onion.
In separate bowl, mix minced turkey with ground coriander.
Heat your wok, add 2 tbsp of oil.
Once oil is hot, add onion & sautee until translucent.
Then add garlic & sautee until fragrant.
Add minced turkey, cook until the color changed.
Add egg mixture, chicken powder, salt & pepper.
Mix well until all cooked.
Can be served with white steamed rice
or Malaysian Roti

Minced in Fillo Pastry


Now, as in my previous post
I add corn kernels & green peas, mix them well.
Thawed fillo pastry, filled mixture in it and fold it like spring rolls.
Brush cooking oil on it.
Then into the oven 180 degree celcius fan forced until golden brown.
Ready to serve,,, we had as our afternoon snack with sweet chilli :D
