Stir Fry Tofu and Eggplant using Carmelina


Carmelina
is not a name of a woman :-)
it is a brand of this chili mixture
it mainly have eggplant in it
i tried this before and add more Sambal Oelek into it
and my husband couldn't eat it, too spicy for him.

this time I didn't check if I still have Sambal Oelek
didn't realize that I didn't have any
oh well too late, I have chopped all ingredients
so I just have to cook them without the extra Sambal Oelek.





here is the recipe:

3 big shallots, finely chopped
1 garlic, thinly sliced
1/2 onions, finely chopped
1 jar of Carmelina
1 block of tofu, cubed, pan fried.
2 lebanese eggplants, sliced, boiled in a hot water
1-2 tbsp of lemon juice
salt and pepper to taste

Method:
Pan fried the cubed tofu first.
Using the same oil
add shallots and onion,
sautee until fragrant and translucent,
add garlic, pan fried tofu and eggplant,
sautee until garlic is fragrant,
add salt and pepper,
mix well, taste and adjust if needed,
add lemon juice and quickly switch off the stove.
Mix well and ready to serve with steamed jasmine rice.



The result? It says "Explosive Mixture" on the jar
well, it is nice but not spicy at all,
I couldn't taste the chili at all
but my hb like it, he also said that it's not spicy at all
at least he could enjoy it :-)

I think next time I will add not only Sambal Oelek again,
but also cherry ripe tomato.

Fried Tofu with Dried Shrimp Chili




 Fried Tofu with Dried Shrimp Chili

 I love dried shrimps, one of my favorite ingredients.
And here is my recipe for dried shrimp chili.

 
There are 2 kinds of dried shrimps, small and large.
The one that I use is large one.

 This is the small dried shrimps.


This is what I used, large size dried shrimps.
You need to soften them by soaking them in the water for at least 1 hour.
My Mum usually soak it overnight.


Here is my recipe.

Ingredients:

3 garlic, sliced then pound
7 shallots, thinly sliced
5 kaffir lime leaves, discard the stalk, thinly sliced the leaves
1 knob of galangal
1 tsp of tamarind puree
3 tbsp water
Rice Brand Oil.
1 package of hard tofu, cut triangle shape, shallow fried.
1 package of dried shrimp, soak in hot water at least 1 hour.
1/2 package of dried chili, soaked in hot water for 1 hour.


Method:

Heat 1 tbsp oil in a non-stick pan, fried tofu, set aside.

Using the same pan and oil, put garlic, shallots,
kaffir lime leaves, galangal, dried shrimps.

Sautee until all softens, add tamarind paste.
Mix well, add a little bit of water just to prevent burnt.

Add fried tofu, mix well.
Cook for 2 minutes further.

Switch off the stove and
ready to serve with jasmine steamed rice.

Minced Turkey, Japanese Tofu and Bean Sprouts


Ingredients:
300 gr of minced turkey
4 cloves of garlic, minced
120 gr of bean sprouts
1 block of Japanese Firm Tofu ("Morinaga" brand), cubed
Plain flour, as needed
1 tbsp of oyster sauce
1 tbsp of mirin seasoning
1 tsp of salt
pepper


Method:
Flour cubed tofu (just to cover the tofu and not a thick flour coating)
pan fry them with oil until golden, set aside.
Heat oil in a pan, add garlic and sautee until fragrant.
Add minced, sautee until color changed.
Add oyster sauce, mirin seasoning, salt and pepper.
Mix well, then add bean sprouts.
Sautee about 30 seconds.
Switch off the stove.
Garnish with spring onions.

YUM!!

Semur Ayam

This is one of our favourite dish.


Chicken in Sweet and Sour Soup a la Mum

(Semur Ayam a la Mama)


Ingredients:
1 skinless chicken breast, cut to desired sizes
2 big potatoes, skinned, cut cubed
Tofu, sliced & fried
5 garlic, chopped finely
10 red onion, chopped finely
10 clove
1 nutmeg
1 cinnamon
1-2 tsp Tamarind puree
Soya sauce
Sweet soya sauce
Red big chilli, as desired
Small red chilli / chilli paddy, as desired (I only use 4)
1 tbsp oil

Directions:
1. Fried potato & tofu until light brown only.
2. Heat oil, add garlic & onion, sautee until fragrant.
3. Add nutmeg, clove & cinnamon, sautee until fragrant, garlic & onion until brown/cooked.
4. In different pan, disolved tamarine with water, and boiled chicken until cook.
5. Add potato & tofu.
6. Add sauteed garlic, onion, nutmeg, clove & cinnamon.
7. Add sweet soya sauce & soya sauce.

It should has sweet and sour taste, with lovely fragrant of spices.

Simple Laksa Noodle with Fried Tofu


Simple Laksa Noodle with Fried Tofu


This is fast, easy and satisfying (^_^)


Ingredients:
2 packages of Maggie instant noodle, chicken flavor
1 small can of coconut milk
1 package of Singaporean Laksa Paste
frozen Green peas
1 package of Fried tofu, chopped length wise
(you can get this from asian grocery)
fresh Coriander leaves
Salt & pepper, as needed
Oil

Method:
Take noodles of the packages, we don't use the seasoning that came with it.
Heat 2 tbsp oil, add laksa paste and cook until aromatic.
Pour in coconut milk and bring to boil.
Add noodles, frozen peas and tofu.
Bring to boil in medium heat until noodles are cooked.
Taste and add salt and pepper (if you like).
Garnish with fresh coriander leaves.
Ready to serve.


You can cracked 1 fresh egg at the bottom of the bowl and
pour the laksa noodle on top, the serve.

 Heart Shape Tofu Mix

I used the mixture of mince prawns, fish and turkey from:

and mix it with 1 tofu in the food processor.


 

Put the mixture in the heart shape silicon mould, put them in the steamer.
Let it cool and shallow fry with butter.

Or you can deep fry them (as usual cover/dip one by one in plain flour, beaten egg and breadcrumbs).

Fast and Easy Steamed Prawns


FAST & EASY STEAMED PRAWNS


Ingredients:
Prawns
1 Zucchini, sliced thinly
1 "Sambal Goreng Ati" Seasoning, brand: Indofood
you can get this seasoning at your Asian Grocery
Firm or Silken Firm Tofu, mashed
Aluminium Foil


Method:
Preheat oven at 180 degree Celcius
Mix well mashed tofu, prawns and the seasoning.
Prepare aluminium foil.
Arrange sliced of zucchini.
Then top it with tofu mixed.
Arrange the rest of zucchini slices on top.
Closed aluminium well.
Into the oven for about 20 minutes.
Ready to serve with coriander leaves and steamed rice.

Tahu Isi Ayam Kalkun (Turkey)


Tahu Isi Ayam Kalkun Cincang & Sayuran /
Stuffed Tofu with Minced Turkey & Vegies

Bikinnya agak sedikit beda dengan tahu isi biasa.
Aku lebih suka yang ini, jadi inget tahu isi (jaman dulu) suka dijual di bioskop.

Bahannya:
1 firm tofu
3 daun bawang, potong kecil2
250 gr minced turkey
2 bawang putih, cincang
1 genggam frozen vegies (jagung pipil, buncis, wortel)
garam & lada, secukupnya

Caranya:
1. Tumis minced turkey dengan bawang putih dan frozen vegies.
Setelah matang, masukkan lada dan garam sesuai selera.
Pisahkan, tunggu dingin seperti suhu ruangan.
2. Setelah dingin, campurkan ke tahu dan masukkan ke blender
dengan daun bawang. Blender sampai adonan rata.
3. Kukus selama 30 menit. Setelah itu dinginkan spt suhu ruangan.
Potong2 sesuai selera.
4. Siapkan adonan tepung, celup satu per satu ke tepung & goreng dalam minyak dengan api sedang sampai matang.
5. Siap dihidangkan dengan cabe rawit atau sambal botol.

Tofu and Tempe in Coconut Milk


Ingredients:
2 Garlic, sliced thinly
1 Spanish onion, sliced thinly
1 tsp sambal oelek
1 can of light coconut milk
1 tsp ground coriander
Salt and pepper
Tofu & Tempe, cubed
Oil for frying tofu & tempe
1 tbsp oil for sautee
5 lime leaves


Method:
Heat oil, fried tofu and tempe, then set aside.
Heat oil, sautee spanish onion until fragrant, add garlic, sambal oelek and lime leaves.
Mix well, sautee until translucent, add fried tofu and tempe, ground coriander, coconut milk, salt and pepper. Bring to boil, then ready to serve with steamed rice.

Mun Tofu and Rice Porridge

Rice Porridge Recipe
Ingredients:
1 cup of rice, washed, covered with 3-4 cups of water
1 cup of corn kernels
1 tsp of chicken powder
1/2 tsp of salt
Method:
Mix all ingredients and bring to boil in medium heat for 1 hour
until it become porridge.

Serving suggestions:
Rice porridge on a bowl and add the Mun Tofu on top of it.
