My Version of Nasi Gila or Crazy Rice



In Menteng area, Central Jakarta, Indonesia
there is a street food vendor that sell "Nasi Gila"
which literally translated as "Crazy Rice" in English.

That was the firs time I ate Nasi Gila.
There are few other places that sells Nasi Gila too not only in Menteng area.

It consists of sausages, lamb or beef, egg, and I think it has sweet soy sauce too.
Now, I am not a fan of red meat, so when the first time I went there,
my friend ordered for me, he said "it is good, you must try it"
when it came, I eat all but the meat.

Yesterday I had prawns, eggs, chicken sausages and button mushroom.
I was looking at them and thinking what to cook,
then I think OK, I will make Nasi Gila my style with no sweet sauce.


So I made it and my family (especially my son) loved it!!

So here it is:

Ingredients:
500 gr of prawns, peeled and deveined
4 eggs, beaten well
100 gr of button mushroom, sliced
4 chicken sausages, sliced
1 green onion, thinly sliced
1 small brown onion, thinly sliced
2 shallots, thinly sliced
1 garlic, thinly sliced
3/4 cup of sweet corn kernels
a touch of fish sauce
1 tsp of salt
pepper to taste


Method:
Mix eggs with salt, pepper and green onion. Set aside.
Heat wok in high heat and add oil,
once oil really hot,
add prawns, sautee until just cooked.
Moved prawns to a bowl.
Use used oil to sautee brown onion, shallots,
and brown mushroom,
sautee until mushroom just soften,
then add garlic and sausages,
sautee until mushroom is really cooked and soften,
add corn kernel and egg mixture.
Cook until the eggs are cooked on one side
and mix well, until all completely cooked.



Serve with warm jasmine rice
and garnish with fried shallots.

Meat and Prawns Fried Meatballs

I love fried food :-)
This one if one my family favorites.
Be good if I can put some chopped fresh chilies or chili powder,
but if I did that, my toddler couldn't enjoy it.
So if you love it spicy, just add chilies :-)

Here is the recipe

Ingredients:
250 gr of minced turkey
-> you can use other type of minced, like beef, 
but minced Pork or Chicken will work well with this recipe <-
250 gr peeled prawns, deveined
2 - 3 tbsp of corn flour
1 egg
1 tbsp of fish sauce
2 tbsp of fried shallots
2 green onion, thinly sliced
salt and pepper to taste


Method:

Put prawns in the food processor
and blend until form a paste.
Move it into a bowl, the rest of ingredients except corn flour,
add a tbsp of corn flour at a time,
you don't want to put too much corn flour into it.
Mix all together, form balls with 2 spoons,
Or you can oiled your hands before you form them into balls.
Preheat the wok in high heat, add enough oil,
fry them but don't put too much in one go,
fry until golden brown,
drained on strainer or kitchen paper towel.

Served with sweet chilli :-)

Prawns and Cherry Tomatoes





Prawns and Cherry Tomatoes

this yummoo dish was our dinner few weeks ago...
you might wanna try ;-)

Ingredients:

300 gr of prawn cutlets
100 gr of cherry tomatoes, halved
1 cup of frozen carrots and green peas
8 kaffir lime leaves
1 tbsp of oyster sauce
2 heaps tbsp of tomato sauce
1 tbsp of chili sauce
boiled water/seafood stock or chicken stock, as needed
salt and pepper
oil, as needed
2 small garlic, thinly sliced
1/2 brown onion, thinly sliced
1 egg, beaten well


Method:
Heat the wok, add oil.
Add prawns, until color changed, quickly take them out and set aside.
Use the same oil,  add brown onion, sautee until soften
then add garlic and kaffir lime leaves, sautee until fragrant.
Add cherry tomatoes, boiled water, oyster sauce,
tomato sauce, chili sauce, and frozen vegies, bring to boil.
Once boiled, add prawns, bring to boil again.
Switch off the stove and ready to serve with steamed jasmine rice.

Nyonya Fried Rice



Nyonya Fried Rice
Another recipe I tried from Florence Tan's Cookbook that I tried today.

and... I LOVEEEEEE this Dish... sooooo yummmyy,,,,

Lucky I made quite a lot, enough for 4 people, 2 for lunch and 2 for dinner :)

 In this section, Florence Tan wrote that this is one of her family's favorite.  When they go for a picnic by the sea (Klebang Beach), they would cook pots and pots of fried rice.  After tired from playing, the fried rice tasted absolutely out of this world and they would polish it off in record time!  She also wrote 'Those were wonderful childhood years and I have always equated food with happiness."

I agree with her... soooo YUMMYLICIOUS!!
Here is the Recipe.

Ingredients:
175 ml or 3/4 cup of cooking oil
3/4 tbsp of light soy sauce
1 tsp of salt
 200 gr shrimps (I used prawns)
 1 kg or 8 cup of cooked rice, fluffed and cooled
 2 large eggs


 Finely Founded Paste:
(I used mortar and pestle for this but I pounded them coarsely as I still like the texture of shallots and pounded dried shrimps)
 7 red chillies, seeded (I used 2 long green chillies, non-seeded)
10 shallots, peeled
 3 cloves of garlic, peeled
1 tbsp of crushed dried shrimp paste
45 grams or 1/2 cup dried shrimps, soaked in water for 5 minutes and drained.


Garnish:
(I only used spring onion)
2 spring onions / scallions, chopped
2 red chillies, seeded and cut into this strips
Omelette made frrom 2 beaten eggs, cut into thin strips


Method:

Heat 150 ml cooking oil and saute finely pounded paste. Season with soy sauce and salt.  Add the prawns and fry until they change color.

Add the cooked rice and mix well.  Push rice to the sides of the wok.  Heat the remaining oil in the centre of the wok, scramble the eggs and then mix thoroughly with the rice.

Garnish with spring onions, chillies, crisp-fried shallots and omelette.

Serve Hot.

Chef Florence Tan's note:
using a non-stick pan will prevent rice from sticking to the pan.  If you do, use 100 ml or 1/2 cup of oil for sauteing the paste.

Florence Tan's Deep-Fried Sour Prawns



Following my excitement once I received the cookbook
Secret of Nyonya Cooking by Florence Tan 
tonight I made one of her recipes, which is

Deep-Fried Sour Prawns (Shrimps)


Fried Dish, 20-minute preparation
 10-minute cooking
Serves 3-4



Ingredients:

500 grams large prawns (shrimps), remove center part of shell, feelers and legs removed
(I used the ready-to-buy prawns that already cleaned with tail on)
3 tbsp thick tamarind juice, extracted from 100 grams
or 1/2 cup tamarind pulp and 3 tbsp of water
(I used 1 heap tsp of tamarind puree and dissolve it in 3 tbsp of water)
1 1/2 tsp of thick soy sauce (I used sweet soy sauce)
1 tsp of salt
2 tbsp of sugar
 500 ml / 2 cups of cooking oil


Garnish:

1 spring onion (scallion), cut into thin strips of 5-cm length.
1 red chili, cut into thin strips
 (I only used spring onion)


Method:

Marinate the prawns (shrimps) in tamarind juice, soy sauce, salt and sugar for 4 hours in the refrigerator.

 Heat the cooking oil and deep-fry the prawns until cooked. (I shallow fried the prawns).

Garnish with spring onion/scallion and red chili before serving.



 Once I sprinkle the garnish (spring onion), the smell of cooked prawns and that spring onion kind of 'blended' and produced beautiful smell.

This dish is yummy, of course as per the title the prawns has sour taste to it, but for me it is a bit salty, perhaps next time I should reduced the salt to just 1/2 tsp, this could be just for my taste bud.

Chef Florence Tan's note:
Prawns / shrimps can be pan-fried with 60 ml or 1/4 cup of cooking oil if desired.  Fry the prawns/shrimps for 3 minutes, then pour in the marinade and cook until the sauce thickens.
Likewise, Spanish Mackerel can be cooked this way, but do not add the marinade.  Omit sugar in the marinade.

Mum's Simple Fried Rice

My Mother used to make this simple fried rice for us.
Simple but delicious :)



Ingredients for Mum's Fried Rice:

2 plates of cooked rice
(you can use overnight rice or just cooked rice,
just use fork to make it fluffy and loose so the rice won't be soggy)
Prawns
3 garlic, thinly sliced
5 shallots, thinly sliced
Mum usually put long red chili (I didn't)
1/2 tsp ground white pepper (you can use lesser pepper)
4 tbsp soya sauce
1/2 tsp salt
Rice bran oil


Eggs mixture:
3 eggs, beaten well
Heat oil and fry egg until just cooked.
Then set aside.


Toppings / Garnish:
Cucumber and Carrot pickle


Recipe for Cucumber and Carrot Pickle
Ingredients:
1 lebanese cucumber, sliced and discard the seeds
1 medium size carrot, cubed small size
(you can add bird-eye chilis and raw shallots if you like)
1 tbsp of white vinegar
1 tsp of salt (table salt)
1 tsp of sugar (you can use raw or caster sugar)
Method:
Mix all ingredients together, keep them in air-tight container.
Marinate them overnight (at least 2 hours but overnight is the best) in the fridge.


Method for Mum's Fried Rice:
Heat pan and add oil, once oil is hot add garlic, shallot and chili, sautee until fragrant.
Add prawns, sautee for 1 minute until prawns just changed color.
Add rice, soya sauce, salt and pepper, and eggs.
Mix well and cooked for about 2 minutes.
Ready to serve with toppings/garnish.

Fried Noodle with Prawns and Vegies




Fried Noodle with Prawns and Vegies

Serve: 2 

Ingredients:
 2 pcs of instant noodle (I use "Ayam Brand")
1 bunch of choy sum, washed, chopped
a handful of bean sprout
250 gr of Prawns
1 carrot, sliced
3 garlic, minced
2 eggs, beaten well
2 green onion, thinly sliced
1 tbsp of oyster sauce
2 tbsp of soya sauce
1/2 tsp of sugar
 2 tbsp of rice bran oil
Boiling water

Method:

Boil water in a sauce pan, once boiled, add 2 pcs of noodles.
Once they are separated and cooked, drained under cold water.
And set aside.
 
Heat pan, add 1 tbsp of oil, once hot, add prawns until just cooked.
Set aside and leave prawns juice in the pan.

 Use the same pan, add 1 tbsp of oil, once hot add garlic, sautee until fragrant.
Add carrot and choy sum, sautee until cooked.
Immediately add noodle, oyster sauce, soya sauce and sugar.
Mix well, then immediately make a "room" in the middle of the pan.
Add beaten well eggs, leave it for a little while then add bean sprouts.
Mix all well.  Move to serving plates, garnish with Tasty Crispy Fried Shallots.

Stir Fry Gai Lan and Prawns in Oyster Sauce
Fast, easy and yummy >^_^<

Ingredients:
1 bunch of gai lan, chopped, washed
250 gr of cooked prawns
2 cloves of garlic, thinly sliced
a handful of frozen sweet corn kernels
1 long red chili, sliced
1 tbsp of oyster sauce
1 tsp of salt
1 tsp of sugar
+/- 125 ml of water
2 tbsp of rice bran oil


Method:
Heat the pan, add oil, once oil hot add garlic and chili.
Stir Fry until just fragrant, add gai lan and water.
Stir fry until soften, then add corn kernels, prawns, oyster sauce, salt and pepper.
Mix well and stir fry until sauces are well combined and gai lan is cooked.

 Sautee Prawns, Cauliflower and Peas


Ingredients:

1 small bunch of cauliflower
250 gr of prawns
1 cup of frozen peas
3 cloves of garlic, thinly sliced
2 spring onion, thinly sliced
1 tbsp of oyster sauce
2 tbsp of light soy sauce
1 - 2 tsp of sugar
A dash of white pepper
Water, as needed
2 tbsp of Rice Bran oil


Method:
Heat oil in a pan, sautee prawns until just cooked, set aside & leave the juice in the pan.
Using the same pan, add garlic & cauliflower at the same time.
Sautee until garlic fragrant, add 40-60 ml of water,
close the lid for 3-4 minutes until cauliflower softens.
Open the lid, add cooked prawns and peas, add water if needed.
Add oyster sauce, light soy sauce, sugar, and pepper, mix well.
Taste to adjust the seasoning.
Switch off the stove, garnish with spring onion.
Ready to serve with jasmine steamed rice.




 My Mum always soaked cauliflower florets in
salted water for few minutes, then drained and set aside.
 The salt water will help to "kill" or force any vegie worms
out from the florets.  I did found few when I did this,
but normally no worms at all.



 Cooked prawns briefly and set aside.

 Sautee cauliflower with garlic.

Add water and closed the lid so they will cooked faster.

Open the lid and add cooked prawns

Also add frozen peas, oyster sauce, light soy sauce,
and sugar, mix well and add water if needed.
Taste to adjust the seasoning.

 Ready to serve

Fried Tofu with Dried Shrimp Chili




 Fried Tofu with Dried Shrimp Chili

 I love dried shrimps, one of my favorite ingredients.
And here is my recipe for dried shrimp chili.

 
There are 2 kinds of dried shrimps, small and large.
The one that I use is large one.

 This is the small dried shrimps.


This is what I used, large size dried shrimps.
You need to soften them by soaking them in the water for at least 1 hour.
My Mum usually soak it overnight.


Here is my recipe.

Ingredients:

3 garlic, sliced then pound
7 shallots, thinly sliced
5 kaffir lime leaves, discard the stalk, thinly sliced the leaves
1 knob of galangal
1 tsp of tamarind puree
3 tbsp water
Rice Brand Oil.
1 package of hard tofu, cut triangle shape, shallow fried.
1 package of dried shrimp, soak in hot water at least 1 hour.
1/2 package of dried chili, soaked in hot water for 1 hour.


Method:

Heat 1 tbsp oil in a non-stick pan, fried tofu, set aside.

Using the same pan and oil, put garlic, shallots,
kaffir lime leaves, galangal, dried shrimps.

Sautee until all softens, add tamarind paste.
Mix well, add a little bit of water just to prevent burnt.

Add fried tofu, mix well.
Cook for 2 minutes further.

Switch off the stove and
ready to serve with jasmine steamed rice.
