Vegetable Fritters



Vegetable Fritters,

I did post many vegetable fritters before,
this one has coriander, garlic and ginger powder in it.

My little coriander powder jar,
bought it from discounted shop :-)




The Recipe:
1/4 cabbage, thinly sliced
1/2 package of bean sprout
1 tsp of garlic powder
1 tsp of ginger powder
2 tsp of coriander powder
1.5 tsp of salt
pepper to taste
Oil - enough for deep frying
3 heaps tbsp of plain flour
3 heaps tbsp of rice flour.
Water, enough to mix the flour and spices
- but not a runny mixture and not thick mixture either -
just in between before you add the vegies in it.
These 3 tbsp of rice flour already make these fritters crispy,
you can ommit plain flour and use only rice flour for a total crisp! :-)
You can add grated carrots too,
I usually did but this time, I just used whatever I have in the fridge.


Method:
simple - just mixed all ingredients together, except oil.
Heat frying pan until hot in high heat,
add oil enough for deep frying,
once the oil is hot,
spoon in fritters mixture
but not over-crowded,
lower the heat to medium,
fry until golden brown.
Repeat remaining mixture until finished.

Super Yummy Corn Fritters




I know I have posted some corn fritters recipes before but this one is a bit different.

On the day I made Oven Fried Chicken, I also made these fritters from the left over seasoning.

Here is the recipe:
Ingredients:
2 tbsp Rice Flour
1 tbsp Plain Flour
1/2 tsp Baking powder
1 Green onion, thinly sliced
1 carrot, grated
Cold water, as needed
Oil for frying
1 cup of Sweet corn kernels
Left over seasonings from My Oven Fried Chicken

Method:
Combined all ingredients together.
Fry per tablespoon in medium-high heat until golden brown.
Drained and served.

Prawns and Sweet Potato Fritters


Prawns and Sweet Potato Fritters

Ingredients:
1 sweet potato, grated
a handful of beanshoots, drained
about 300 grams of prawns, chopped coarsely
about 1/2 cup Corn flour
about 1/2 cup Rice flour
Salt and pepper
2 spring onion, finely chopped
1 tsp curry powder
1 tsp of garlic powder
1 egg
Oil


Method:
Mix all ingredients together.
Make sure the consistency is not too runny.
Heat oil in high heat, once heated, then turn the heat down to medium heat.
Take 1 tbsp of mixture into the oil.
Be careful not to burn it.
Continue with the rest.
Placed fritters in kitchen towel.
Then transfer them to a plate or bowl.

Serve with sweet chilli or Thai Nuoc Mam Sauce or just chilli sauce or...
just eat it as it is like my husband did ;-)

Prawns Veggies Fritters










Prawns Veggies Fritters / Bakwan Udang Sayuran

Yes,,, Fritters Again.... I guess I will never get bored of fritters.

Ingredients:

3 big prawns, each cut to 3
1 tbsp of wholemeal self raising flour
1 tbsp of rice flour
1/2 tsp salt
1 tsp ground black pepper
1/2 tbsp of blended garlic
4 pcs of lime leaves, chopped thinly the leaves only
Water as needed
1/2 handful of corn kernels
1/2 carrot, grated


Method:


Combine all ingredients together. A bit thick, also not a runny batter.
Fry each tablespoon of it until batter finished.
Ready to serve with tomato sauce, chilli sauce/sweet chilli sauce, or Nuoc Sam Vietnamese Sauce.


Nuoc Sam Vietnamese Sauce

Ingredients:
1 garlic, minced
1 tbsp blended chilli
5 tbsp fish sauce
3 tbsp sugar
Lime juice

Method:
Combine all ingredients together. This Vietnamese sauce have sweet salty lemony taste. Great for seafood fritters or seafood spring rolls.

Vegetable Fritters


(Bakwan Sayur)

Ingredients:
2-3 cloves of garlic, minced
Bean shoot
Cabbage, chopped finely
Carrot, julienne cut
2 eggs
2 maggie chicken block
2 handful of corn kernels
1 spring onion, chopped finely
Salt and pepper

Oil for frying


Directions:
Combine all ingredients, except oil.
Heat oil in high heat, once hot turn it to medium heat.
Scoop with 1 tablespoon and fry until the finished.


Serving suggestion:
- Maggie Sweet Chilli
- Sambal ABC / ABC chilli sauce
- Tomato sauce

Vegetable Fritters















Bakwan Sayuran a la Abang-abang Gorengan


Hari ini pagi-pagi udah kepengen makan bakwan sayur gorengan kayak yang dijual sama abang-abang tukang gorengan di Jakarta.

Bikin sendiri deh, lumayan enak juga... My husband like it, cuma dia bilang kebanyakan lada..hehehe...


Ingredients:
Cabbage (Kol), chopped finely. I use 1/2 from 1/4 cabbage.
Bean sprout (Toge), a handful
Carrot (Worter), 1/2, shredded finely
2 Spring onion (daun bawang), chopped finely
3 Eggs (Telur)
2 tsp Salt (Garam)
2 Maggie Block Chicken
White Pepper, as desired
2 tbsp Rice Fluor (Tepung Beras)
2 tbsp Plain Wheat Fluor (Atau Tepung Terigu)
Oil as needed

Directions:
Mix all vegetables.
Add eggs and mix well.
Add salt, pepper and maggie, and mix well.
Add fluor, and mix well.
Heat oil in high heat.
Take 1 spoon and fry it until it's finished.

Once all done, ready to serve with Maggie Sweet Chilli, and/or Heinz Big Red Tomato Sauce
