Prawns and Vegetable Fritters



Prawns and Vegetable Fritters



Ingredients:

200 grams of prawns

Bean Sprouts, 100 gr of finely chopped cabbage,
1 grated carrot, 1 cup of sweet corn kernels


4 lime leaves, chopped finely, discard the stalk
2 spring onions, chopped finely



1 cup plain flour
1/2 cup rice flour
1 tbsp of curry powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 cube of "OXO" chicken stock
salt and pepper
1 egg

1 can of coconut milk


1 clove of garlic, minced
1 shallot, minced



Method:

Mix well flour, spices, spring onions, lime leaves,
garlic and shallots

Make dwell in the middle

Pour coconut milk
and mix well with fork

Add 1 egg, mix well


Add water, enough to get the correct consistency of batter



Prepare oil in a pan first with high heat, once oil hot
lower the heat to medium.
Fry fritter and top it with prawns.
Fry both side until mixture cooked.
Serve with red bird eye chilis.
