Ayam Woku a la Paula Umbas
Chicken in Spices Manadonese Style
I like this dish but didn't know how to cook it until one day I had a chat with my long time friend, Paula Umbas, she gave me this recipe and it was awesome!!
Ingredients:
1 skinless chicken breasts, cubed (you can use other parts of chicken, I use chicken breasts just because it is no fat and easy to eat)
Basil leaves, put more for better taste
1 lemongrass, bruised
2 Spring Onion
3 Lime leaves
Lemon juice from 1 lemon or as needed
1 tsp salt
1 tbsp oil
Blend/grind ingredients:
3 cloves of garlic
3 cloves of red onion
2 cm of ginger
1 big red chilli (I did not blend this, instead I chopped it finely just to have nice color and also because my husband doesn't like chilli)
Direction:
Marinate chicken in lemon juice, leave it in the fridge for 2 hours before cooking.
After 2 hours, drained, set aside.
Saute grinded ingredients with oil in medium heat until fragrant.
Add lime leaves and lemongrass. Mix well.
Add chicken. Close the pan lid for 2 minutes.
Add basil leaves, spring onion and salt.
Mix well and taste it.
Then ready to serve with steam white rice.
