Dry Sweet Tasty Potato


This is a side dish.

I like to have it with Chicken in Yellow Soup (Soto Ayam),

Yellow Rice (Nasi Kuning), or Rice cooked in Coconut Milk (Nasi Uduk).


Dry Sweet Tasty Potato

(Kentang Kering Manis Berbumbu)


Ingredients:

1 kgs potatoes, peeled, washed, sliced, soaked in water & salt for 10 mins, fried until dried.

2 big red chilli, chopped finely (you can use more if you like it spicy)


6-10 kaffir lime leaves (I use dried one), chopped finely, remove the "middle shaft"
1 bay leaf
1 lemongrass, bruised
2-3 tbsp of palm sugar
3 tbsp raw sugar
1 tsp salt
1 tbsp lemon water/tamarind water
Oil
50 ml water

Blender/Grind:
4 red onion
4 garlic
1 tbsp galangal



Directions:

POTATOES: Heat oil in high heat, once oil hot lower the heat to medium heat, add potatoes, keep stirring until potatoes crisp. Set aside.

MIXING SAUCE: Sautee grinded spices, add lemongrass, chilli, kaffir lime leave, bay leaf until quite dry. Add salt & sugar, mix well, then add water & tamarind/lemon water. Sautee & keep stirring until thicken. Switch off stove, then mix fried potatoes into the sauce above and mix well. Ready to serve.



Dry Sweet Tasty Bilis Fish

(Teri Kering Manis Berbumbu)


If you use bilis fish, fry fish in oil until cooked. And then mix it with the sauce and mix well.
