Prawn Fried Rice

Longing for Fried Rice a la my Mum, so on Sunday 28th December 2008 I made Prawn Fried Rice for me and my husband.

It is fast and easy to cook, also delicious!


^^Prawn Fried Rice^^
Serve: 2 portions

Ingredients:
2 plates of cooked white rice
3 eggs, beaten well
2 maggie chicken blocks
3-4 spring onions, chopped finely
5 garlic, chopped finely
10 red onion, chopped finely
Peeled prawns, 1 handful (or as much as you like)
2 tbsp oil
2 tbsp butter
Black mushroom (hioko), 1 handful (or as much as you like)
Soy sauce (I use Pearl River Bridge Superior Light Soy Sauce), as needed.
Chilli paddy, sliced - if you like, I did not use it because my husband can't eat hot food.

Once spring onion finely chopped, divided by 2 portion
Mix 1 portion of it with beaten eggs, add a pinch of salt, mix well
Set aside the other portion for the last

Direction:
Heat oil and butter, once hot, add garlic & red onion, sautee until cooked.
Add black mushroom, sautee for about 30 seconds.
Add prawns & beaten eggs & maggie block, mix well until prawns just cooked.
Add rice & spring onion, mix well.
Add soya sauce, mix well until all rice covered with soya sauce.
Keep cooking until rice a bit dry.

Serving suggestion:
Serve with shrimp crackers, carrots and cucumbers pickles, or slices of tomatoes & cucumber.


~I did not add any salt to the rice since the saltiness were already enough for us~
