Kue Bantal / Odading / Bolang-Baling




Not all hollow like this one,
some got really nice texture.



Kue Bantal (literally translated as Pillow Cake)
selama ini lihat via internet, dan pernah nyoba tapi gagal,
gak nyalain resepnya, nyalahin diri sendiri, maklum tukang masaknya
masih amatir.

Setelah liat dan masak Kue Goreng orang Maori
(Maori's Fried Bread), teksturnya kok kayak
crossed between cakwe and kue bantal.

Sudah dua kali coba pake resep tersebut untuk bikin kue bantal.
Resepnya sederhana, gak perlu proofing karena gak pake yeast,
gak perlu nunggu lama.

After made Maori's Fried Bread (which has textures of
crossed between our cakwe and kue bantal) many times,
I decided to modified the recipe a little bit to see
if I can make kue bantal from it.





Kue Bantal is one of Indonesian Fried Bread,
tasted sweet, fluffy, square shape,
look just like pillow.

Excuse my kue bantal, it doesn't look pretty
but it does taste like kue bantal.


Here is the recipe:

1 Cup of plain flour
1 Cup of bread flour
1 Tbsp of baking powder
1/2 tsp of salt
1 tsp of bi-carb soda/baking soda
1 Cup of caster sugar - or more if you like

1 1/2 Tbsp of butter
1/2 Cup of warm water
1/4 Cup of warm milk

Oil for deep frying.


This lot was only rested for 15 minutes.



Method:

Combined all ingredients together, make a well in the center.

In a cup, combined all wet ingredients and butter together,
microwave until just warm, not hot.

Pour wet ingredients into dry ingredients,
combined using a spoon,
then using gloved hand, combined and knead the ingredients
just until it's not sticky anymore.

Cover the bowl with plastic wrap.
Let it rest for 30 minutes.


Only rest for 15 minutes.
Look at the beautiful hollow in it.


Heat a wok, fill with oil enough for deep frying.
I used low to medium heat.

After that, roll out the dough,
cut to square pieces, flatten each out before deep frying.
