Prawns Rainbow Soup a la Ms Lucky Piggy
(Sup Pelangi a la Miss Lucky Piggy)
Ingredients:
Prawns, peeled
Baby carrots, 4
Tomato, 1, cut wedges
Cauli flower
Long beans (buncis), cut half
Eggplant, 2, each cut to 2 or 3
Spring onion, 2, cut to 2
Celery, use the leaves only
Salt, if needed
Pepper
Water
2 'Ikan Bilis' block (I used Malaysian "Knorr" brand, you can find it in Asian stores)
Method:
1. Boiled water, add cauli flower & carrots until half cooked.
2. Add eggplant, long beans, tomato, prawns, 'ikan bilis' block.
3. Taste it, add salt if needed.
4. Add pepper.
5. Add spring onion and celery for about 1/2 - 1 minute.
6. Mix well.
7. Serve with fried garlic.
Garnish: Fried garlic.
How to make Fried Garlic?
2-3 garlic, minced finely
Fried in oil until fragrant, golden brown and dried
Drain and set aside.
