Rice and Fish Madras Curry Rice Pilaf





Jamie Oliver's Madras Curry Rice Pilaf


I saw this recipe on "Jamie Oliver's Family Christmas" on TV few nights ago.

Looks interesting so I tried it.

I did not recall the measurement but this here is what I used:

1 small brown onion, thinly sliced
1 bunch of coriander, chopped off the roots, well washed.
divided coriander leaves into 2 parts.
chopped coriander stalks separately from the leaves.
3 heaps tbsp of Patak's Madras Curry Paste
Jamie used Madras Curry Paste, but if you like a milder one you can use Korma Curry Paste
3 plates of cooked rice
2 cups of frozen sweet corn kernels
3 slices of whiting fish fillets, soaked in hot boiling water, drained
2 soft boiled eggs
sea salt, as needed
tomato, thinly sliced
 2 tbsp rice bran oil


Method:
Heat pan, add oil, sautee brown onion until soften, add chopped of coriander stalks, sautee again until onion caramelized.
Add Madras curry paste, cook until fragrant, add rice.
Take pan off the stove, mix rice and curry paste, put it back on the stove,
add fish, frozen corn kernels, chopped coriander leaves, cooked until all mixed well and cooked completely.
Add salt, if needed.  I found the Madras curry paste I used is unsalted so I add 1 flat tsp of salt for 3 plates of rice.
Once done, switch off the stove.
Spoon to serving plate, garnish with coriander leaves,
add soft boiled eggs and slices of fresh tomato.
