Lagi pengen banget makan empek-empek adaan, salah satu makanan favorit. Bikin sendiri, jadi and enak pula :D Bangga bisa bikin empek-empek sendiri hehehe,,, norak ya? soalnya belom pernah bikin sendiri, di Jakarta selalu beli. Ternyata bikin sendiri lebih ber'seni' karena bisa pake ikan filletnya lebih banyak and rasanya muantappp....

Roast Rosemary Chicken

Got this recipe from Recipes+ Magazine, and it was yummooowww :D
ROAST ROSEMARY CHICKEN
Original recipe:
8 small chicken thigh cutlets, skin on (I use 1 chicken breast fillet, skinned, cubet)
4 anchovy fillets in oil, drained, finely chopped
100 gr char-grilled red capsicum, finely chopped (I used fresh one)
2 tbsp finely chopped rosemary
2 tbsp vegetable or olive oil
8 baby pickling onions, peeled, halved
6medium potatoes, halved
I add: 1 carrots
Method:
1. Preheat oven 220 degree / 200 degree fan forced.
Using a small knife, cut 2 slits in each chicken thigh.
Combine anchovies, capsicum, half the rosemary and half the oil in a small bowl.
Place chicken in a roasting pan.
Add capsicum mixture; rub over chicken to coat.
2. Place onion, potato, carrot, remaining rosemary and oil in a separate roasting pan
Season with salt and pepper. Toss to coat. Bake potato mixture and chicken for 35 minus or until chicken is cooked and vegies are tender.
3. Spoon potato mixture into a serving dish. Top with chicken. Serve at once.

Spiced Fried Chicken with Corn & Mushroom
SPICED FRIED CHICKEN
Ingredients:
1 chicken breast fillet, skinned, cubed
1 tsp garlic powder
lime juice from 1 lime
1/2 tsp salt
1/2 tsp ground coriander
oil, as needed
Method:
Put all ingredients, except oil in a bowl.
Mix them well, marinade for 30 minutes, drained.
In hot oil, fry them until brown/crispy.
Set aside.
CORN AND MUSHROOM SAUTEE
Ingredients:
1 single garlic, sliced
2 shallots, sliced
2 handful frozen corn kernels
1 can of button mushroom, drained, "wash" under running water
1 tbsp butter for sautee
1 tomato, wedges
Method:
Sautee shallots and garlic with butter until fragrant & translucent.
Add corn kernels, mushroom and tomato.
Cooked until all soft.
When serving top it with Spiced Fried Chicken.
Ready to serve with steamed rice.
Banana, Sultana & Choc Bits Pastry
Ingredients:
Puff pastry, cut diagonal into 4 pcs
Banana, sliced
Sultana, as needed
Chocolate bits, as needed
Raw sugar
Egg, beaten well
Method:
Lay 1 sheet of puff pastry onto the flat working surface.
Brush puff pastry with beaten egg,
then top with raw sugar, banana, sultana and choc bits.
Preheat oven 180 degree fan forced.
Fold puff pastry, spray oven tray.
Put pastry into the oven until golden brown.
Homemade Cinnamon Chocolate Rolls


These was made before we moved into a new house.
I have few puff pastry in the freezer that I have to used up.
This is very easy and yummy :D
Ingredients:
2 sheets of puff pastries, thawed
Raw sugar, as needed
Dutch ground cinnamon, as needed
Sultana, as needed
Chocolate bits, as needed
1 egg, beaten well
Method:
Put 1 sheet of puff pastry into flat working surface.
Brush puff pastry with beaten egg.
Top it with raw sugar, Dutch ground cinnamon, sultana and chocolate bits.
Spead it evenly until the whole puff pastry covered.
Roll puff pastry, then cut about 7 cms in length into small rolls.
Spray muffin tray, put them into muffin tray.
Preheat oven 200 degree fan forced.
Put rolls into the oven until cooked/golden brown, about 20 minutes.
