Mexican Meatball Skewers and Rice Salad

I made this for our dinner last night. 
Nice and light meals recipe from Super Food Ideas Magazine.
In the magazine it says "Low Saturated Fat and Lower Sodium".

I did not use the Mexican chilli powder, otherwise my 20mo old son won't be able to eat it.
He enjoyed this dinner, although it was more playing with food than having dinner :)



Mexican Meatballs Skewers

Ingredients:
12 bamboo skewers, pre-soaked
550 gr lean minced beef
I used mince turkey instead
1 egg, lightly beaten
1/2 cup fresh breadcrumbs
2 tsp Mexican chilli powder
1 garlic clove, crushed
I used garlic powder 
1 tsp ground coriander
3 green onions, thinly sliced
250 gr cherry tomatoes
1 medium yellow capsicum, cut into 2.5cm pieces
I used red one instead, couldn't find a yellow one yesterday :-)
Rice Bran oil cooking spray


  Method:
Combine all ingredients in a large bowl.
Mix well and roll 3 tsp of mixture.
Put 2-3 drops of oil on your palms
so the meatballs mixture won't stick on your palms when you roll them.
Thread them into the pre-soaked skewers, alternately with tomatoes and capsicum.
Heat greased barbeque plate or chargrill over medium heat.
Spray meatballs skewers with spray cooking oil.
Cook, turning occasionally, for 8-10 minutes, or until cooked through.

Rice Salad

Ingredients:
3/4 cup long-grain rice, rinsed
1 cup frozen corn kernels
125 gr can kidney beans, drained and rinsed
3 green onions, thinly sliced
2 tbsp fresh chopped coriander
2 tbsp lemon juice
1 tbsp olive oil


Method:
Cook rice in a saucepan of boiling water following packet directions until tender,
adding corn for the last 3 minutes.  Drain. Refresh under cold water. Drain.
Transfer to a bowl, add beans, onion and coriander.
Combine lemon juice and oil in a jar. Season with salt and pepper. Secure lid. Shake well.
Drizzle over rice mixture.  Toss to combine.

I did not follow this instruction.  I cooked the rice in the rice cooker instead until fully cooked.
I put the corn kernel in a bowl, and pour hot boiling water into the bowl.
Then I let it sit for 10 minutes, then drained.
Put the rice, corn kernels and other ingredient into a bigger bowl.  Mix them well.

  1. I can just imagine the fun your son had playing with the skewers! These sound great. I agree with your changes...your version of the instructions seem much better because I love my rice cooker!
