Hanoi Prawn Cakes


Hanoi Prawn Cakes
Ingredients:
Batter:
Corn flour
Rice flour
Salt, as desired
Ground black pepper, as desired
1/2 tsp baking powder
Cold water
Mix all batter ingredients in cold water. The batter should be a bit thick, not light.
Filling:
Sweet potato, grated
Carrot, grated
Corn kernels
Bean shoots
Spring onions, sliced thinly
Method:
Mix batter and filling
In a hot pan, add oil.
Add a good tablespoon on mixture in a pan.
Fried until golden brown.
Served with Nuoc Sam dipping sauce.

I Fu Mi a la Me

Ingredients:
Dried noodles, ready to eat
Minced chicken
Black mushroom / hioko
Tofu
Cauli flower, florets
Carrots, sliced
Corn kernels
Baby peas
Oil
2 tbsp Soya sauce
1 tbsp Oyster Sauce
Pepper, as desired
3 Garlic, sliced thinly
1/2 Onion, sliced thinly
Water, as needed.

Method:
In a plate, put dried noodles on it.
In a hot pan, add oil.
Once oil hot, add onion and garlic, sautee until soft.
Add all veggies, once soft, add soya sauce and oyster sauce.
Add water, mix well.
Once ready, pour it on top of the noodles.

Sambal Balado


Sambal Balado
Balado Chilli from West Sumatera Island, Indonesia


Ingredient:
10 shalots, sliced thinly
15 red chillis, blend roughly in a blender
4 lime leaves
2 tbsp lemon juice
1 tbsp salt
4 tbsp oil

Method:
In a hot pan, add oil.
Add shallots and chilli until fragrant.
Add lime leaves and salt, mix well.
Cook until soften, add lemon juice.
Switch off stove.
Ready to serve with petai (smelly beans), steamed eggplants, boiled eggs.

Sambal Terasi - Versi 1 /
Indonesian Shrimp Paste Chilli - 1st Version
(Shrimp Paste = Belacan in Malaysian)
Ingredients:
12 pcs of red chilli
2 big shallots
1 tomatoe
1 tsp salt
1/2 tsp sugar
2 tbsp oil
Method:
Put red chilli, tomatoes, shallots in a blender.
In a hot oil, add chilli mixture and sautee until all translucent.
Once cooked, add sugar and salt.
Swith off the stove and ready to serve.
