Canned Sardines in oil cooked in Green Chili







Easy Peasy Sardines in Green Chili

Ingredients:
1 can of sardines in oil
1/4 lemon, juiced
1/2 tomato, thinly wedged
2 garlic, thinly sliced
1 green chili, pound with a pinch of salt
4 kaffir lime leaves
salt and pepper
about 75ml of water



Method:
Green chili: using mortar and pestle, pound green chili, garlic and a pinch of salt, set aside.
Heat pan, then add oil from can of sardine (not much), add 1 tbsp of oil into the pan.
Once oil hot, add garlic, kaffir lime leaves, pound green chili, tomato, sautee until aromatic.
Add the sardines and water, mix well and bring to boil.
Add a dash of 1/2 tsp of salt and a dash of pepper.
Mix well and taste to adjust the seasoning.
Add lemon juice, mix well and immediately switch off the stove.

Ready to serve with steamed jasmine rice.
