Parsnip Chips




Parsnip Chips


Very easy to make :)

Use potato peeler to peel the skin off.
Then thinly sliced with potato peeler.
Heat oil enough for deep frying.
Fry parsnip until golden.
I missed calculating as I never make any parsnip chips before, so some are burnt!

Once done, I sprinkle little salt on top.

Rice and Fish Madras Curry Rice Pilaf





Jamie Oliver's Madras Curry Rice Pilaf


I saw this recipe on "Jamie Oliver's Family Christmas" on TV few nights ago.

Looks interesting so I tried it.

I did not recall the measurement but this here is what I used:

1 small brown onion, thinly sliced
1 bunch of coriander, chopped off the roots, well washed.
divided coriander leaves into 2 parts.
chopped coriander stalks separately from the leaves.
3 heaps tbsp of Patak's Madras Curry Paste
Jamie used Madras Curry Paste, but if you like a milder one you can use Korma Curry Paste
3 plates of cooked rice
2 cups of frozen sweet corn kernels
3 slices of whiting fish fillets, soaked in hot boiling water, drained
2 soft boiled eggs
sea salt, as needed
tomato, thinly sliced
 2 tbsp rice bran oil


Method:
Heat pan, add oil, sautee brown onion until soften, add chopped of coriander stalks, sautee again until onion caramelized.
Add Madras curry paste, cook until fragrant, add rice.
Take pan off the stove, mix rice and curry paste, put it back on the stove,
add fish, frozen corn kernels, chopped coriander leaves, cooked until all mixed well and cooked completely.
Add salt, if needed.  I found the Madras curry paste I used is unsalted so I add 1 flat tsp of salt for 3 plates of rice.
Once done, switch off the stove.
Spoon to serving plate, garnish with coriander leaves,
add soft boiled eggs and slices of fresh tomato.

Quick and Easy Minced Beef



Quick and Easy Minced Beef

Ingredients:
250 gr of lean minced beef
1/4 brown onion, thinly sliced
1 can of Italian diced tomato
2 sprigs of thyme
3 tbsp tomato paste
2 tbsp of Worcestershire sauce
sea salt, cracked black pepper and a touch of sugar
2 tbsp rice bran oil
a bunch of parsley, finely chopped

Method:
Heat pan, add oil, add brown onion, sautee until soft.
Add minced beef, sautee until cooked,
Add tomato paste, cook for about 2 minutes.
Add diced tomato, thyme, worcestershire sauce, salt, pepper and sugar.
Mix well and cook for about 2-3 minutes further.
Add chopped parsley, mix well and switch off the stove.

Ready to serve.

Quick and Easy Minced Turkey

Ingredients:
250 gr of minced turkey
2 tbsp of rice bran oil
1/4 brown onion, thinly sliced
200 gr of fresh button mushroom, thinly sliced
1/2 bunch of coriander, chopped
2 tsp of basil pesto
sea salt and ground white pepper
3 Piquillo
about 1 cup of crispy fried bacon


Method:
Heat the pan, add oil, then brown onion,
sautee until soften, add mushroom, sautee until cooked.
Add minced turkey, sautee until cooked too.
Then add basil pesto, piquillo, bacon, little salt and pepper.
Mix well, cook for 1-2 minutes further.
Then add chopped coriander, mix well and switch off the stove.
Ready to serve with steamed jasmine rice or sour dough.

My Jumbo Tuna Salad

I have made 2 tuna salad dishes before:


Ingredients:
1/2 red capsicum, diced
1/2 bunch of coriander, chopped
1 big can of "John West" tuna in oil
1 can of 5 beans mixed, drained, rinsed
1/2 red onion, thinly sliced
1 tomato, sliced
3 sliced of pineapple with 3 tbsp of its natural juice
1 tbsp of sliced kalamata olive
2 cheeks of lemon, juiced
sea salt and black pepper





Method:
Combined and mix all ingredients.
Into the fridge to cool until lunch or dinner time :-)

I sprinkled this one with slices of green bird-eye chili for me :)

freshly made and cool, great for summer :-)

Ingredients:
1 can of chickpea, drained, rinsed
1/2 bunch of fresh coriander, chopped
2 piquillo, quatered
1/2 red onion, thinly sliced
125 gr cherry tomatoes, halved
drizzle olive oil
juice from 1/2 lemon
salt and pepper



Method:
Combine and mix well all ingredients in a serving bowl.
Into the fridge, let it cool until ready to serve.

Chicken and Piquillo with Basil Pesto
Mashed Potato, Pea and Bacon

This is a twist of an easy peasy yummy "Turkey Involtini" recipe from Super Food Ideas :-)

I should used Turkey Breast instead of Chicken Breast
Since I couldn't open the Piquillo jar (I have arthritis), I did not fold Piquillo and Basil Pesto into the pounded chicken breast.  
I add fried bacon into the mashed potato and pea.

Mashed Potato, Pea and Bacon

Ingredients:
8 small Potatoes
1 cup Frozen Peas
Sour Cream, as needed
Parmesan Cheese, as much as you like :-)
4 shoulder bacon, finely chopped

Method:

Spray frying pan with cooking oil.
Fry bacon until golden and crispy, set aside. Keep the oil.

Washed Potatoes, put in a sauce pan, cover with cold water.
Bring to boil until potatoes cooked, add frozen peas for the last 4 minutes.
Drained. Put the sauce pan back on top of the stove, mashed.
This will also dry excess water.

Mix all together in a serving bowl 
including sour cream and parmesan cheese, mix well.






Chicken and Piquillo with Basil Pesto


Ingredients:
2 chicken breast fillets, sliced thinly.
2 tbsp basil pesto
150 gr piquillo, quatered
Olive oil spray

Method:
Use the same pan that you used to fry bacon, add more cooking oil spray if needed.
Fry chicken breasts until cooked on both sides.
Put them on serving plate.
Put piquillo and drizzle with basil pesto.
Ready to serve.

This one is just adding fish and pineapple into it,
quite refreshing especially if you have it with fresh sliced (or pickled of) cucumber.

Mexican Meatball Skewers and Rice Salad



Mexican Meatball Skewers and Rice Salad

I made this for our dinner last night. 
Nice and light meals recipe from Super Food Ideas Magazine.
In the magazine it says "Low Saturated Fat and Lower Sodium".

I did not use the Mexican chilli powder, otherwise my 20mo old son won't be able to eat it.
He enjoyed this dinner, although it was more playing with food than having dinner :)



Mexican Meatballs Skewers

Ingredients:
12 bamboo skewers, pre-soaked
550 gr lean minced beef
I used mince turkey instead
1 egg, lightly beaten
1/2 cup fresh breadcrumbs
2 tsp Mexican chilli powder
1 garlic clove, crushed
I used garlic powder 
1 tsp ground coriander
3 green onions, thinly sliced
250 gr cherry tomatoes
1 medium yellow capsicum, cut into 2.5cm pieces
I used red one instead, couldn't find a yellow one yesterday :-)
Rice Bran oil cooking spray


  Method:
Combine all ingredients in a large bowl.
Mix well and roll 3 tsp of mixture.
Put 2-3 drops of oil on your palms
so the meatballs mixture won't stick on your palms when you roll them.
Thread them into the pre-soaked skewers, alternately with tomatoes and capsicum.
Heat greased barbeque plate or chargrill over medium heat.
Spray meatballs skewers with spray cooking oil.
Cook, turning occasionally, for 8-10 minutes, or until cooked through.

Rice Salad

Ingredients:
3/4 cup long-grain rice, rinsed
1 cup frozen corn kernels
125 gr can kidney beans, drained and rinsed
3 green onions, thinly sliced
2 tbsp fresh chopped coriander
2 tbsp lemon juice
1 tbsp olive oil


Method:
Cook rice in a saucepan of boiling water following packet directions until tender,
adding corn for the last 3 minutes.  Drain. Refresh under cold water. Drain.
Transfer to a bowl, add beans, onion and coriander.
Combine lemon juice and oil in a jar. Season with salt and pepper. Secure lid. Shake well.
Drizzle over rice mixture.  Toss to combine.

I did not follow this instruction.  I cooked the rice in the rice cooker instead until fully cooked.
I put the corn kernel in a bowl, and pour hot boiling water into the bowl.
Then I let it sit for 10 minutes, then drained.
Put the rice, corn kernels and other ingredient into a bigger bowl.  Mix them well.

this yummoo dish was our dinner few weeks ago...
you might wanna try ;-)

Ingredients:

300 gr of prawn cutlets
100 gr of cherry tomatoes, halved
1 cup of frozen carrots and green peas
8 kaffir lime leaves
1 tbsp of oyster sauce
2 heaps tbsp of tomato sauce
1 tbsp of chili sauce
boiled water/seafood stock or chicken stock, as needed
salt and pepper
oil, as needed
2 small garlic, thinly sliced
1/2 brown onion, thinly sliced
1 egg, beaten well


Method:
Heat the wok, add oil.
Add prawns, until color changed, quickly take them out and set aside.
Use the same oil,  add brown onion, sautee until soften
then add garlic and kaffir lime leaves, sautee until fragrant.
Add cherry tomatoes, boiled water, oyster sauce,
tomato sauce, chili sauce, and frozen vegies, bring to boil.
Once boiled, add prawns, bring to boil again.
Switch off the stove and ready to serve with steamed jasmine rice.

My Chunky Pineapple Salsa

Ingredients:
1 can of pineapple in natural juice, chunky-ly chopped, keep the juice
1 small shallots, finely chopped
2 tomatoes, cubed
1 tbsp lemon juice
1/4 tsp of salt

Method:
Combine all ingredients together,
add 3 -4 tbsp of pineapple juice
and carefully mix them - not to break the pineapple.
Chilled in the fridge until ready to be eaten :-)

Crispy Fried Chicken



Crispy Fried Chicken

I got this recipe from Mbak Retno of Kedai Hambug,
who always have great recipes with beautiful tempting pictures too.

I made this about 2 nights ago and we all love it!

Below is her recipe too but I add few more ingredients:

Ingredients:
600 gr chicken breast fillet, thinly sliced to 15-20 pieces

Coating Batter:
10 tbsp plain flour
4 tbsp corn flour
2 tsp baking powder
1 tsp salt
1/2 tsp garlic powder
1/2 tsp cayenne pepper (I did not add this so my toddler can eat it too)
1 tsp ground black pepper
1 tsp of ground coriander (I add this)

Crispy Flour Mixture:
10 tbsp plain flour
3 tbsp corn flour
1 tsp baking powder
1 tbsp salt
1 tbsp of shredded coconut (I add this)


Method:
Prepare hot oil for deep frying.
Dip sliced chicken into coating batter, then roll and coat with crispy flour mixture.
Deep fry in hot oil until golden brown.
Once cooked, drained.
Ready to serve.
