Prawns Fried Noodles with "Kokita fried noodles paste"

(Mie Goreng Udang "bumbu mie goreng Kokita")


Ingredients:

5 garlic, chopped finely

3-4 large red onion, chopped finely

220 grams (1 package) Hokkien shelf fresh noodles (brand "Kan Tong") you buy this at Woolworths.

Prawns

Cabbage, chopped finely

3 eggs, beaten well

1-2 tbsp Sweet soya sauce

2-4 spring onions, chopped finely*

1 carrot, cubed

Pepper

Oil & butter

*Mix 1/2 of finely chopped spring onion with beaten well eggs & 1/2 tsp salt



Directions:

1. Heat oil & butter, sautee garlic & red onion until fragrant.

2. Add cabbage, sautee until half cooked.

3. Add eggs, mix well until cooked.

4. Add noodles & spring onion.

5. Add sweet soya sauce & pepper.

6. Mix well until cooked.


Serving suggestions: slices of tomatoes & cucumber, or carrots & cucumber pickle, with prawns crackers, chilli sauce and tomato sauce.

Dry Sweet Tasty Potato


This is a side dish.

I like to have it with Chicken in Yellow Soup (Soto Ayam),

Yellow Rice (Nasi Kuning), or Rice cooked in Coconut Milk (Nasi Uduk).


Dry Sweet Tasty Potato

(Kentang Kering Manis Berbumbu)


Ingredients:

1 kgs potatoes, peeled, washed, sliced, soaked in water & salt for 10 mins, fried until dried.

2 big red chilli, chopped finely (you can use more if you like it spicy)


6-10 kaffir lime leaves (I use dried one), chopped finely, remove the "middle shaft"
1 bay leaf
1 lemongrass, bruised
2-3 tbsp of palm sugar
3 tbsp raw sugar
1 tsp salt
1 tbsp lemon water/tamarind water
Oil
50 ml water

Blender/Grind:
4 red onion
4 garlic
1 tbsp galangal



Directions:

POTATOES: Heat oil in high heat, once oil hot lower the heat to medium heat, add potatoes, keep stirring until potatoes crisp. Set aside.

MIXING SAUCE: Sautee grinded spices, add lemongrass, chilli, kaffir lime leave, bay leaf until quite dry. Add salt & sugar, mix well, then add water & tamarind/lemon water. Sautee & keep stirring until thicken. Switch off stove, then mix fried potatoes into the sauce above and mix well. Ready to serve.



Dry Sweet Tasty Bilis Fish

(Teri Kering Manis Berbumbu)


If you use bilis fish, fry fish in oil until cooked. And then mix it with the sauce and mix well.

Prawns Rainbow Soup a la Ms Lucky Piggy

(Sup Pelangi a la Miss Lucky Piggy)


Ingredients:

Prawns, peeled
Baby carrots, 4
Tomato, 1, cut wedges
Cauli flower
Long beans (buncis), cut half
Eggplant, 2, each cut to 2 or 3
Spring onion, 2, cut to 2
Celery, use the leaves only
Salt, if needed
Pepper
Water
2 'Ikan Bilis' block (I used Malaysian "Knorr" brand, you can find it in Asian stores)

Method:
1. Boiled water, add cauli flower & carrots until half cooked.
2. Add eggplant, long beans, tomato, prawns, 'ikan bilis' block.
3. Taste it, add salt if needed.
4. Add pepper.
5. Add spring onion and celery for about 1/2 - 1 minute.
6. Mix well.
7. Serve with fried garlic.

Garnish: Fried garlic.
How to make Fried Garlic?
2-3 garlic, minced finely
Fried in oil until fragrant, golden brown and dried
Drain and set aside.

Sautee Prawns Veggies a la Ms Lucky Piggy

(Tumis Udang Sayuran a la Miss Lucky Piggy)




Ingredients:
Long beans (buncis) cut +/- 5 cms
Prawns
50 gr of vermicelli, soak in hot water
1 small can of champignon whole
3 cloves of garlic, chopped finely
1 tbsp of oil for sautee
50 ml of water, as needed
'Ikan Bilis' cube, Malaysian 'Knorr' brand (you can find it in Asian stores) - see picture below
2 spring onion, finely chopped
Pepper























Direction:
1. Heat oil & add garlic, sautee until fragrant.
2. Add cauli flower, long beans until almost cooked.
3. Add prawns, champignon, ikan bilis cube, pepper mix well and cook.
4. Add water -as needed, not too much as we don't want it to be soupy- mix well.

Serving suggestion: with white rice.

Garnish: fried red onion (I did not use this).

How to make Fried Red Onion (Bawang Merah Goreng):
3 cloves of red onion (if you would like to make more, add more cloves), sliced
Oil
Fry sliced red onion until dried brown color.
Drained, set aside.

Omelette Prawns Veggies a la Ms Lucky Piggy



This is also one of my new 'invention'. Had no meat or minced or fish left, only have prawns in the fridge, a little veggies, tofu & eggs. So I made this dish. Turn out to be yummy!



Omelette Prawns Veggies a la Ms Lucky Piggy



(Telur Udang Sayuran a la Ms Lucky Piggy)



Ingredients:

1/4 cabbage, chopped finely
2 eggs, beaten well
1/2 of hard tofu, cubed
2 cloves of garlic, minced
4 cloves of red onion, minced
Prawns, a handful, or as you desired
1/4 onion, chopped finely
1 maggie block chicken
3 spring onions, chopped finely
Oil & butter for frying
Salt, as needed

Directions:

Put in a bowl: cabbage, eggs, tofu, prawns, maggie block, salt and spring onions, mix well.
Heat oil, add garlic, red onion and onion until fragrant and onion cooked.
Add mixing from the bowl, fry until cooked.

Serving Suggestion:
with white rice, chilli sauce and tomato sauce.

Mun Tofu
















This is one of Chinese food and my husband like this dish so much, once he asked me to cook this for his lunch box for 6 working days!

Mun Tofu / Minced Meat and Tofu



Ingredients:

1 silk tofu

3 - 4 tbsp minced turkey (you can use chicken or beef)

2 spring onions, chopped finely

4 garlic, minced

100 ml water

oil



Seasoning:

1 tbsp oyster sauce

1 tbsp chinese rice wine

1 tbsp soya sauce

2 tbsp fish sauce (I use "maggie" brand)

1 tsp sesame oil

1 tsp raw sugar

pepper





Direction:

1. Heat oil, saute garlic until fragrant.

2. Add minced turkey, sautee until almost cooked.

3. Add all seasoning, mix well.

4. Add tofu, spring onion & water, mix carefully until cooked.



Spring Roll in Rice Paper



This is my new 'invention', something different. Usually spring roll should be wrapped in spring roll paper. But I made spring roll wrapped in Vietnamese rice paper.


Spring Roll in Vietnamese Rice Paper

Ingredients:
Vietnamese Rice Paper
1-2 garlic, chopped finely
1 egg, beaten well
2-3 minced turkey (you can use more or use minced chicken)
Vermicelli, pour hot water in vermicelli, simmer for few minutes, drain, set aside.
5 long Beans (Buncis), chop finely
1 carrots, cut small cube
1 hard tofu, cut small cube
1 spring onion, chop finely
1 maggie block chicken
salt, as desired / if needed
pepper, as needed

Direction:
1. Heat oil, sautee garlic until fragrant.
2. Add minced & carrot, sautee until cooked.
3. Add long beans, tofu & egg, sautee until cooked.
4. Add maggie block, salt & pepper.
5. The last, add spring onion. Mix all together.
6. Prepare Vietnamese rice paper by following the instruction at the back of the package.
7. Take 1 spoon of the above mix, put in the Vietnamese rice paper and fold like folding envelope.

Serving suggestion:
- with peanut butter sauce, or
- soya sauce & sambal ABC

Peanut butter sauce:
1 tbsp smooth peanut butter sauce
Hot water, as needed
1-2 red chilli paddy, chop finely
white vinegar, as needed / as desired
salt, as needed / as desired
Mix all together.

Chicken Mushroom



I used to cook this for my husband's lunch box. It is fast and easy to prepare, also delicious (^_^)





Sautee Chicken and Mushroom



(Tumis Ayam dan Jamur)





Ingredients:

1 skinless chicken breast

1 can of mushroom

3 garlic, minced

3 cm ginger, minced

1 maggie block chicken

1 tbsp cooking oil

1 tbsp sesame oil

2 tbsp soya sauce

1 tbsp sweet soya sauce





Directions:

1. Heat oil, add ginger and garlic, sautee until fragrant.

2. Add chicken, sautee until cooked.

3. Add mushroom, maggie block, sesame oil, sweet soya sauce & soya sauce.

4. Sautee until cooked.



Serve suggestion: with white rice / plain rice porridge.

Chicken Kalio

I cooked this dish and we brought it to our friend's house as one of the dish for Christmas Lunch. There were 9 adults who ate this dish. They are not familiar with this dish and called it "curry" and (I am glad) they like it (^_^)

Kalio is actually Rendang with gravy. Rendang is an Indonesian traditional food from West Sumatera Province, Sumatera Island. Rendang is Kalio with almost dried/dried gravy. Normally, people make Kalio or Rendang with beef. Instead, I use skinless chicken breasts and add red kidney beans in it. Sometimes I make it with lean pork meat. You can add ground chilli, if you like it hot.
I mixed in 2 sachets of Rendang paste from "Kokita" and "Indofood", as each of them have special taste. The "Kokita" one is more spicy. Mixing them will give beautiful taste and not too hot for sure.

^^Chicken Kalio^^
Ingredients:
3 psc skinless chicken breasts, cut to desired sizes
5 garlic
10 red onion
5 cm turmeric, or 2 tbsp turmeric powder (I did not use this)
5 cm ginger
5 cm galangal
2 lemongrass
2-4 tbsp "sambal oelek", or as desired (I did not use this)
3 bay leaves (I used dried one)
2 cans of regular coconut milk (regular means not light coconut milk)
750 gr red kidney beans (I use the canned one, 750 gr, drained)
1 sachet of Rendang Paste, "Kokita" brand
1 sachet of Rendang Paste, "Indofood" brand
2 tsp salt
Direction:
Blend garlic, red onion, turmeric, ginger & galangal.
Heat coconut milk in high heat, add all blended spices.
Stir occasionally, once almost cooked keep stirring.
Once bubbling, add chicken, Indofood & Kokita Rendang paste, bay leaves & lemongrasses.
Stir until the chicken is cooked and all mixing mixed well.
Once chicken is cooked, lower the heat to medium heat, and add red kidney beans.
Mix well and keep stirring ocassionally until bubbling.
Now, this is still with gravy, this is what we called KALIO.
If you keep heating and stirring in minium heat for the next 2 hours, it will become RENDANG.


Tips:
When cook with coconut milk, please be careful as it will spurt everywhere. So it is important to keep stirring.

Prawn Fried Rice

Longing for Fried Rice a la my Mum, so on Sunday 28th December 2008 I made Prawn Fried Rice for me and my husband.

It is fast and easy to cook, also delicious!


^^Prawn Fried Rice^^
Serve: 2 portions

Ingredients:
2 plates of cooked white rice
3 eggs, beaten well
2 maggie chicken blocks
3-4 spring onions, chopped finely
5 garlic, chopped finely
10 red onion, chopped finely
Peeled prawns, 1 handful (or as much as you like)
2 tbsp oil
2 tbsp butter
Black mushroom (hioko), 1 handful (or as much as you like)
Soy sauce (I use Pearl River Bridge Superior Light Soy Sauce), as needed.
Chilli paddy, sliced - if you like, I did not use it because my husband can't eat hot food.

Once spring onion finely chopped, divided by 2 portion
Mix 1 portion of it with beaten eggs, add a pinch of salt, mix well
Set aside the other portion for the last

Direction:
Heat oil and butter, once hot, add garlic & red onion, sautee until cooked.
Add black mushroom, sautee for about 30 seconds.
Add prawns & beaten eggs & maggie block, mix well until prawns just cooked.
Add rice & spring onion, mix well.
Add soya sauce, mix well until all rice covered with soya sauce.
Keep cooking until rice a bit dry.

Serving suggestion:
Serve with shrimp crackers, carrots and cucumbers pickles, or slices of tomatoes & cucumber.


~I did not add any salt to the rice since the saltiness were already enough for us~

Christmas Lunch 2008

I spent Christmas this year with my husband. We went to my husband friend's house (Keith) down town for Christmas lunch with his family. Not many people came, only his mother-in-law, sister-in-law & her family. They have 1 son and 2 cats >1 of them still kitten<. That morning, as usual we had breakfast at home and around 10ish, I started to heat up my Chicken Kalio Rendang, it is chicken cooked in coconut milk, some spices and I added red kidney beans. It was quite a lot because I made it from 3 large skinless chicken breast and 750 grams of red kidney beans. You can find the recipe on the My hobbies page. We went to his house, his wife was still preparing the food, preparing the table and then her family came then not long after that we have our Christmas lunch. Besides my Chicken Kalio Rendang, she cooked Turkey with cranberry sauce, Pork with apple sauce, Roasted Chicken, Bean salad, Veggies >cauli flower & brocolli<, Roasted Potato and Roasted Sweet Potato. As for the drinks, they were Champagne (but me and my husband we don't drink and I am 6.5 months pregnant, so no alcohol drinks for us) and his wife kindly made Fruit Punch, I guess she made it specially for us (^_^) The fruit punch was really nice and refreshing, I think it has sprite/7-up, pineapple in natural juice and fresh passion fruit. During lunch, they play Christmas song and each of us got 1 gift, you have to pop-it-up, it makes noise :-) I got 2 chocolate and 1 candy. My husband got the same, only he got caramel chocolate. We ate them after lunch. Since we all pretty full after yummy Christmas lunch, some still sitting outside, talking and we sit inside, sometimes I play with Roxie >the kitten<>Vicky< served us with Christmas pudding (Christmas cake, custard, ice cream)...yummy...

After that, again we sit at the TV room and it was around 5pm when me and my husband started to feel sleepy :-)

Since Keith's nice and nephew are about to go home, we also go home.

It was nice! Nice people, Keith and Vicky are very friendly, Lucky (their only son) is also nice. Their relatives and Vicky's mother are nice too.

As Chinese Indonesian and as a Buddhist, at home, we never celebrate christmas. We do buy Christmas Cake every year because my Mum likes it, and we enjoy it too hehehe... But it was never a "big" event for us. We celebrate Chinese New Year and for 2009 Chinese New Year will be on 26th January 2009.
