Tofu and Tempe in Coconut Milk


Ingredients:
2 Garlic, sliced thinly
1 Spanish onion, sliced thinly
1 tsp sambal oelek
1 can of light coconut milk
1 tsp ground coriander
Salt and pepper
Tofu & Tempe, cubed
Oil for frying tofu & tempe
1 tbsp oil for sautee
5 lime leaves


Method:
Heat oil, fried tofu and tempe, then set aside.
Heat oil, sautee spanish onion until fragrant, add garlic, sambal oelek and lime leaves.
Mix well, sautee until translucent, add fried tofu and tempe, ground coriander, coconut milk, salt and pepper. Bring to boil, then ready to serve with steamed rice.

Chilli Prawns


Ingredients:
2 cloves of garlic, sliced thinly
1 small knob of ginger, bruised
oil, as needed
Coriander leaves
Frozen corn kernels
1 Red chilli, seeded, sliced thinly
(I could use more but my husband can't eat much chilli like me)
500 grams of prawns
1 tbsp of fish sauce
pepper

Method:
In a hot oil, add garlic, ginger & chilli, sautee until fragrant.
Add corn kernels & prawns, mix well.
Then add fish sauce, pepper & coriander leaves.
Sautee until prawns cooked.
Garnish with fresh coriander leaves.
Ready to serve with steamed rice.

Pastries


Nothing special on this one, we all know how to make it.
I was just wanted to finished up all puff pastries & frozen mix veggies in the fridge before moving. Still had fun folding them in different kind of shape.

The filling?? Only vermicelli and mix veggies (potatoes, carrots, corn, peas and broccoli)
Sautee them with sliced garlic, a little salt and chicken powder, soya sauce and sweet chilli.

Steam Kailan with Soya Sauce



Ingredients:
a bunch of Kailan
oil, as needed
2 cloves of garlic, bruised
1/2 tsp of salt
1 tbsp of oyster sauce
2 tbsp of sweet soya sauce / Ketjap Manis


Method:
Steam Kailan, set aside

Soya Sauce:
In a hot oil, add garlic and sautee until fragrant.
Add oyster sauce, sweet soya sauce and salt.
Bring to boil, then add steamed kailan.
Mix well and ready to serve.


Gulai Ayam, Telur dan Kentang

Sambal Ebi (Udang Kering) a la Mum / My Mum's Dried Shrimp Chilli



Found dried shrimp in Thai grocery store so I made this, twice!
My Mum's recipe,,, yuuummmmooooooowwwww...


Ingredients:
1 package of dried shrimp, soak overnight
250 grams of candle nuts (Indonesian: kemiri), soak overnight, mashed until become paste
1 package of dried chilli, soak overnight
(My Mum used fresh chilli)
1 whole garlic, peel
about 25 pcs of shallots, peel
salt
oil, as needed


Method:
blend coarsely: candle nuts, dried chilli, garlic, shallots
Crushed coarsely dried shrimp with fingers
In a hot oil and high heat, add blended ingredients and dried shrimp.
Sautee until all fragrant, translucent and cooked.
Lower to low heat, then add salt, mix well, taste.
Ready to serve with steamed rice

MY SPUDZZZZZZZZ....



Ingredients:
1 big potato, leave it whole
1 pancetta, sliced thinly
1 parsley, leaves only
1 garlic, minced
about a handful of chopped cabbage
about 1 cup grated mozarella cheese, or more as you like


Method:
Rub potato with salt, into the oven 150 degree fan forced until brownish color.
Salt will make the potato skin crips.
Once cooked, take the potato out from the oven, let it cool.
Cut potato into 2, scoop the potato out, leave the skin whole.
Put the potato in a bowl, set aside.
Heat oil, sautee garlic until fragrant, add pancetta and cabbage, sautee until cabbage cooked.
Place it in a bowl with potato, parsley and mozarella cheese, mix all well.
Scoop it into the potato skin, also sprinkle cheese on top of it.
Into the oven again, 150 degree fan forced until the cheese melted.
Ready to serve.


Fish in Coconut Milk


FISH IN COCONUT MILK

Got this recipe from one of the morning show and it tasted good!!

Ingredients:
1 White fish, cubed
1/2 tsp of turmeric
1/2 tsp of salt
Juice from 1 lime
Oil, as needed
1 onion, sliced thinly
2 cloves of small garlic, sliced thinly
1 knob of ginger, grated
1 know of ginger, sliced thinly
Few curry leaves
1 big green chilli, seeded
1/2 can of light coconut milk
2 tomatoes, wedges
1/2 can of thick coconut milk


Method:

Marinate: White fish, turmeric, salt, lime juice for 25 minutes, drained

In a hot oil, add onion, sautee onion until translucent but not black.
Add garlic, sautee until fragrant.
Add slices of ginger, mix well.
Add grated ginger, mix well.
Add curry leaves, big green chilli, fish, light coconut milk, mix well.
Add tomatoes, simmer for about 7 minutes, then add thick coconut milk, then simmer for about 2 minutes.
Ready to serve with steamed rice.

Cheese and Bread Crumb Chicken with Spicy Mayonaisse


Cheese and Bread Crumb Chicken

Ingredients for Chicken:
(1) 2 chicken breasts fillets, sliced or cubed
(2) Plain flour
(3) Egg wash: 1 egg & +/- 50ml milk, beaten well
(4) Bread crumb, 1 tsp garlic powder, 1 tsp ground coriander, 1 tsp chicken powder (I use "MASSEL"), grated parmesan cheese, 1/2 tsp salt, 1/2 tsp pepper.
(5) Oil for frying

Method for Chicken:
Dip chicken into (2), then (3) then (4), fry in hot oil until golden brown.
Dry them on kitchen towel.

Spicy Mayonaisse:
Mix plain mayonaisse with sweet chilli and sambal oelek.

Ready to serve.
