Chicken Saltimbocca and Homemade Basil Pesto


Got this recipe from food magazine here and here is the recipe.

Ingredients:
2 chicken breast fillets, skinned
4 pancetta
16 large sage leaves (i don't use this)
2 tbsp olive oil
1 large lemon
1 tbsp butter

Method:

1. Cut each chicken fillet in half horizontally to make 4 pieces. Using a meat mallet, pound chicken pieces between sheets of baking paper, one at a time, until about 5 cms thick.
2. Place chicken on a clean work surface. Top with 1 slice of pancetta and 2 sage leaves. Secure with toothpicks.
3. Heat oil in a frying pan over moderately high heat. Cook chicken, in batches, for 2-3 minutes each side or until golden and cooked. Transfer to a heatproof plate. Cover loosely with foil; rest 5 minutes.
4. Finely grate zest from lemon. Juice lemon. Add juice, butter and zest to pan; bring to boil. Remove from heat. Arrange chicken on a serving platter. Serve with sauce.


Homemade Basil Pesto

Ingredients:
1 big clove of garlic
Heaps of basil leaves
Olive Oil, as needed
a handful of pine nuts

Method:
Blender all ingredients.




Bihun Goreng Kampung Spesial Pake Telor


kangen makan bihun goreng yang biasanya dijual pagi hari sama ibu2, bareng ma nasi uduk...
1 packet of vermicelli
1/4 cabbage, sliced
1 cup of frozen corn kernel
2 eggs, beaten well
1 tbsp soya sauce
2 garlic, sliced
Oil & pepper
In a hot oil, add garlic, once fragrance, add eggs & cabbage,
sautee until cabbage cooked, then add vermicelli,
sweet soya sauce, soya sauce & pepper.
Mix well until all cooked.
Ready to serve with chilli sauce or peanut sauce (sambal kacang)

Malaysian Roti and Chili Con Carne

I used prepared sauce from "Old El Paso" brand,
only need to heat oil, add sliced brown onion,
once translucent, add minced,
cook until color changed then pour in the sauce.
Bring to boil.
And ... read to serve.

Tuna & Beans Pasta

This one is VERY EASY,,,
For the pasta, i used SAN REMO's Cheese Pasta
Cooked it according to the instructions.
Once it is done, mix it with JOHN WEST's TUNA & BEANS.

Oriental Fried Noodles

Ingredients & Method for NOODLES:
2 pcs Dried noodles (i use "Chang's" brand)
1 Carrots, julienne cut
1 bunch of Choy sum, chopped
1 cup of Frozen corn kernels
Minced turkey
2 garlic, sliced thinly
2 big shallots, sliced thinly
1/2 onion, sliced thinly
1 tbsp of oyster sauce
2 tbsp of sweet soya sauce
Oil & pepper
In a hot oil, add shallot & onion, until translucent, then add garlic,
sautee until fragrant, then add minced.
Cooked minced until the color changed, add all veggies.
Sautee until veggies almost cooked, add noodles,
oyster sauce, sweet soya sauce, pepper.
Once the taste is OK, set aside.
Ingredients & Method for FRIED EGGS:
4 eggs, beaten well
2 spring onion, sliced thinly
1 big red chilli, seeded, sliced thinly
1/2 tsp chicken powder (i use "MASSEL" brand)
1/2 tsp salt & 1/2 tsp pepper
Mix well all ingredients & fry the egg mixtures.
