Simple Vermicelli Soup
with Choy Sum and French Poach Eggs
Vermicelli here is not bihun / mee-hoon / bee-hoon
it is sohun, which is much softer that bihun.
We had this for our light lunch on Sunday.
This can served 2 portions but a light/little portions.
Recipe for French Poach Eggs, can be viewed here:
= = Vermicelli Soup = =
Ingredients:
1 package of vermicelli
about 500 ml of water
1 tbsp of chicken powder (i use MASSEL)
1 bunch of choy sum, chopped
Method:
Boiled water in a pan, add vermicelli & choy sum.
Bring to boil, add chicken powder & mix well.
Ready to serve with French Poach Eggs.

Y'all already knew how to make it, this is our dinner.
Have 1 bowl left over for my lunch today :-)

Chicken, Mushroom & Round Beans


Chicken, Mushroom & Round Beans
Ingredients:
a handful of round beans / buncis
1 chicken breast, cubed
1 can of whole button mushroom, drained
2 garlic, sliced thinly
4 shallot, sliced thinly
1 tsp sugar
2 tbsp sweet soya sauce
1 tbsp fish sauce
1/2 tsp pepper
Salt, if needed
Water, as needed
Method:
In a hot oil, sautee shallot & garlic until fragrant.
Add chicken & round beans, sautee until chicken cooked.
Add mushroon, sugar, sweet soya sauce, fish sauce & pepper.
Mix well, taste if salt is needed.
Bring to oil, add water as needed.

Sambal Terasi - versi 2


Sambal Terasi - Versi 2 /
Indonesian Shrimp Paste Chilli - 2nd Version
Ingredients:
2 heaps tbsp of sambal oelek
2 tomatoes, diced finely
1 heaps tsp of Indonesian cooked shrimp paste
2 tbsp oil
Method:
Heat oil in a pan.
Then add sambal oelek & tomatoes.
Mix well, cook until all cooked.
Add shrimp paste and mix well, then switch off the stove.
Sambal Oelek that I use is "CONIMEX" brand, made in Holland.
For me, the saltiness & acid in it is enough.
So I did not add more salt.
Had this today with fried salted mackerel (made in Thailand)
with steamed white rice,,,, yuuummmooooo....

Egg, Minced & Coriander

Egg, Minced and Coriander
Ingredients:
3 eggs, beaten well
250 gr turkey minced
3 spring onion, chopped finely
2 garlic, minced
1/2 onion, chopped finely
1 heaps tsp of ground coriander
1 tsp chicken powder (i use MASSEL)
1/2 tsp salt
1/2 tsp pepper
2 tbsp oil
Method:
Mix beaten eggs with spring onion.
In separate bowl, mix minced turkey with ground coriander.
Heat your wok, add 2 tbsp of oil.
Once oil is hot, add onion & sautee until translucent.
Then add garlic & sautee until fragrant.
Add minced turkey, cook until the color changed.
Add egg mixture, chicken powder, salt & pepper.
Mix well until all cooked.
Can be served with white steamed rice
or Malaysian Roti

Minced in Fillo Pastry


Now, as in my previous post
I add corn kernels & green peas, mix them well.
Thawed fillo pastry, filled mixture in it and fold it like spring rolls.
Brush cooking oil on it.
Then into the oven 180 degree celcius fan forced until golden brown.
Ready to serve,,, we had as our afternoon snack with sweet chilli :D

I had fun 'playing' in the kitchen

On Thursday, 20th August 2009, I had fun in the kitchen.
My fun in the kitchen means spending quite some time in the kitchen
preparing something, either making cake mixture or fritter mixture
or just simply finding recipes.
On that day, my husband was taking care of our baby
and there I was in the kitchen playing with wonton.
For quite some time I have tried to find wonton skin
but no luck until few days before, we went to Maitland
and saw wonton skin in Woolworths.

Previously, before I found these real wonton skins,
I use flat mountain bread as the wonton skin, it works well too.
Only it doesn't stay crispy for long, not like this real wonton skin..
Ok then,,,, here is the recipes:
Ingredients:
40 pcs of wonton skin
500 gr of minced turkey
4 spring onion, sliced thinly
3 garlic, minced well
2 tbsp of sesame oil
1 tsp of MASSEL chicken powder
1/2 tsp of pepper.
Method:
Mix all ingredients well.
Spoon 1 - 2 tsp into the wonton skin,
and start folding it, until all minced mixture finished.
In my case there was still some minced mixture left.
I made something from it,,, will be in the next posting.
I have not fry them yet, they are still in the freezer.
I will post their pictures once fried.
Oh I fold those wontons in different kind of models - as you can see in the picture.
Had a lot of fun and,,, and the big wontons for sure are for my husband hahaha...

Fried Masala Fish

I posted this recipe before using orange roughy fillet.
This time I used salmon... big fish, meaty...
Ingredients:
1 salmon fillet, boned & skinned
1/2 brown onion, sliced thinly
Salt, as needed.
Spices mixture:
1 tsp ground coriander
1/2 tsp ground turmeric
1 tsp chilli powder
1 garlic, grated
Oil, as needed
1/2 tsp salt
Mix all spices together with oil, this time I made it quite thick.

Method:
Heat oil, sautee brown onion, add salt, for about 20 minutes
until the color becomes black and really translucent then set aside.
Using tip of knife, make some incission on salmon meat.
Just so the spices mixture will get into the fish,
and when you fried it the inner sider of the fish will be cooked
because this is a meaty/thick salmon.
Rub fish with spices mixtures thickly.
Heat the oil you use to sautee brown onion
fried fish for 2-3 minutes on each side until cooked.
I put the other mixture onto the other side of the fish when once side is on the frying pan. By doing this, I get a thick spices mixture on the fish, instead of smearing it on the plate.


Chinese Style Steamed Salmon

Ingredients:
Fish fillet (I use Tasmanian Salmon )
1 tbsp Chinese rice wine
1/2 tsp minced ginger
2 cloves of minced/grated garlic
2 tsp soya sauce
1 tbsp sesame oil
fresh coriander leaves
a handful of black chinese mushroom/hioko, soak in hot water & sliced

Directions:
Put fish in the steam dish.
Pour on the fish - Chinese rice wine, soya sauce, sesame oil,
top with mushroom and fresh coriander leaves.
Steam for 10-15 minutes until fish cooked.
Ready to serve.





Ayam Goreng Mentega / Butter Fried Chicken

we like this one (which one we don't like? seems like we like all food hahaha...)
well, I was making vegetable fritters, i'm sure y'all know how to make it already,
and there are still some mixture of it left... so i make this dish...
my mixture of VEGETABLE FRITTERS was consists of:
1 cup of plain flour
1/2 cup of corn flour
1 carrot, grated
1/2 cabbage, chopped finely
1/2 package of bean shoots
1 tsp of chicken powder (i use MASSEL)
1/2 tsp of salt
1/2 tsp of pepper
1 tsp (yes,,, 1 tsp) of baking powder
and water
Combined all mixtures together but not too lose, the mixture should be a bit thick.
Spoon/scoop 1 by 1 and fry it in a medium hot oil on both sides
until golden brown.
Now from this mixtures, I only add slices of 1 chicken breast fillet (skinned)
and mixed them well.
Fry it one by one until golden brown in a medium hot oil, then set aside.
On a sauce pan, add 2 tbsp of butter.
Once melted, add 1 tbsp of wochestershire sauce,
1 tbsp of soya sauce, 2 tbsp of sweet soya sauce,
and a pinch of salt, then bring to boil.
Once boiled, switch off the stove and add 2 tbsp of lemon juice (or as much as you like).
Pour this sauce onto the chicken & ready, we had it with steamed white rice
and Tjap Tjhai / Cap Cay.

Tuna and Penne Pasta Baked ... Again...

ok guys,,, here is MY tuna and penne pasta baked...
this one is special FOR US coz I made it without the instant seasoning :D
here is the recipe
Ingredients:
2 garlic, sliced thinly
1 shallot, sliced thinly
1/4 brown onion, sliced thinly
1 big can of tuna in brine / springwater
(i tipped the water on the pasta)
about 250 gr of penne pasta
3 eggs (i did not beat the eggs)
Mozarella & Cheddar cheese
1 small can of tomato paste
1 tomato, diced small size
1 tsp chicken powder (i use MASSEL)
1/2 tsp salt
1/2 tsp pepper
Oil
Method:
Prepare baking tray, add penne pasta, and tip the water from canned tuna in it.
Prepare sauce pan, add oil and once hot, add brown onion & shallot,
sautee until translucent, add garlic.
Once all soft, add tuna, tomato paste, diced tomato,
chicken powder, salt & pepper.
Add about 2 cups of water and bring to boil.
Once boil, pour it onto penne pasta, add cheese then mixed well.
Then add the eggs on different spot in the baking tray.
Top it again with cheese.
Into the oven 200 degree celcius fan forced oven
for about 15-20 minutes or
until the cheese is golden brown.
Then ready to serve with ,,, tomato sauce (for my husband),,, chilli sauce (for me),,, this was our lunch... yuuuummmmm,,,, even my husband said it is yummy... happy me :-)

Butter Chicken Balls


This is one of Indian food called Butter Chicken.
I used turkey minced to make meat balls.
Nothing really special from this one
because I am using prepared butter chicken sauce.

My Style of Malaysian Roti

I'm still curious about this Roti.
I added 1 sachet (7 grams) of dry yeast into the mixture.
I like this one better than the previous one I made
The result is a soft and fluffy bread.
because the result is a soft and fluffy roti.
Try it yourself ... yummmoooo :-)
And this time I tried to bake it,
but I prefer the Fried one better.
Perhaps I should add baking powder if I want to bake it.
Well,,, there is always next time...
Maybe next time besides dry yeast, I will also add baking powder.
Then bake it, see whats the result, and will share it with you.

My Style of Malaysian Roti

I couldn't believe the nice smell coming from the mixture while I was mixing all ingredients together. This Roti is delicious, my husband said it is delicious! So y'all should try it,,, so your husbands would love you more just like mine hahaha... Have a lovely day, Ladies (^_^)
Ingredients:
1 cup of self-raising flour
1/2 cup of corn flour
1 heaps tsp of chicken powder (i use MASSEL brand)
3 cloves of garlic, minced
2 spring onions, sliced thinly
1 carrot, grated
Water, as needed
Oil, as needed
Method:
Combine all ingredients together except oil.
Put some flour on the working surface to knead the flour.
You don't have to knead the dough to much.
Form it into a large sausage shape.
Cut 1 by 1 and flatten the dough with your roller.
In a hot pan, add a little bit of oil, fry both side until golden brown.

 
Meat Balls Curry

I use MILK instead of Coconut Milk, this is mainly for my husband. He always feel bloated after eating food that contains coconut milk. So I used milk, nothing different and no bloated feeling anymore PLUS it is healthier because I use non-fat milk (^_^)

Ingredients:
1 package of rendang sauce, KOKITA brand
2 package of gulai sauce, ASIAN HOME brand
about 3 cups of non-fat milk
1 can of red kidney beans, drained
250 grams of minced turkey
Method:
Form minced turkey into meat balls.
In a medium hot sauce pan, add all sauces.
Mix well, add meat balls, just to sealed them.
Add milk and red kidney beans, bring to boil until meat balls cooked.
Then ready to serve with Malaysian Roti.

Simple Fried Rice Noodles / Kwetiaw Goreng

Simple Fried Rice Noodles
Kwetiaw Goreng
Ingredients:
3 cloves of garlic, minced
1 bunch of baby choy sum, chopped
1/2 pack of bean shoots
2 tbsp of soya sauce
1tsp of sweet soya sauce
1 tsp of chicken powder
pepper, as needed
oil, as needed for sautee
1 pack of rice noodles, soak for about 1 minute in boiling water

Method:
In a hot oil, add garlic, sautee until fragrant.
Add baby choy sum, saute for 30 seconds.
Add bean shoots, eggs, chicken powder, mix well.
Add rice noodles, soya sauce, sweet soya sauce and pepper.
Mix well until veggies cooked.
Ready to serve with chilli sauce.


Mun Tofu and Rice Porridge

Rice Porridge Recipe
Ingredients:
1 cup of rice, washed, covered with 3-4 cups of water
1 cup of corn kernels
1 tsp of chicken powder
1/2 tsp of salt
Method:
Mix all ingredients and bring to boil in medium heat for 1 hour
until it become porridge.

Serving suggestions:
Rice porridge on a bowl and add the Mun Tofu on top of it.

Prawns Rice Porridge


Prawns Rice Porridge
Ingredients:
1 cup of rice, washed
Prawns, peeled
1/2 cup of corn kernels
1/2 cup of baby peas
2 cloves of garlic, whole
2 spring onion, chopped finely
1 tsp of chicken powder
3 eggs, beaten well
salt and pepper
Method:
Combine garlic, rice, corn kernels and baby peas,
bring to boil with 3-4 cups of water until become porridge.
Add chicken powder, salt, pepper, prawns.
Mix well, bring to boil until prawns cooked.
Once cooked, switch off the stove, immediately add spring onions.
Ready to serve
