Steamed Rice Noodle with Minced Turkey and Shiitake Mushroom
Kwetiaw Rebus dengan Cincang Ayam Kalkun dan Jamur Shiitake


Ingredients:
200 gr dry rice noodle
Bean shoots
Pak Choy
Minced Turkey
Shiitake Mushroom
4 garlic, minced
2 spring onion, thinly sliced
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp sugar
50-100 ml water
2 tbsp rice bran oil
ground white pepper
 1 cube of chicken stock (I use "OXO" brand)
for garnish: tong cai / tang chai / tianjun vegetable




Method:
Heat oil, add garlic sautee until fragrant.
Add shiitake mushroom and minced turkey.
Once cooked, add oyster sauce, sugar, soy sauce, white pepper.
Mix well and add water.
Taste to adjust the seasoning.
Switch off the stove.


Boil water in a pan, add 1 cube of chicken stock.
Mix well and add rice noodle.
Cook rice noodle according to instructing in the package.
Mine only take 5 minutes in boiling water.
Strained, put them on the plate.
Then use the same water, boil pak choy and bean shoot for about 1 minute.
Strained, put them on top of the rice noodle.
At last put minced mixture on top of vegies.
Garnish with tianjun vegetables.

Ready to serve.

Mix well before eating.

My Fish Cake


MY FISH CAKE

I have a little fish fillet and a carrot, which was starting to get old in the fridge.
Thinking of making something from it, I came out with my fish cake.
Hope you enjoy it as much as we do (*_*)


Ingredients:
250 gr White fish fillets
a knob of ginger, grated
1 tsp garlic powder
1 carrot, grated
1 long red chilli, deseeded, thinly sliced
2 spring onions, thinly sliced
salt & pepper
oil for frying

Steamed Pak Choy with Sesame Oil and Light Soy Sauce Dressing


This is really easy, just like the title:
Cleaned and steamed pak choy in salted water.
Once done, strained and moved them to a plate.
Pour mixture of 1 tsp sesame oil and 1 tbsp of light soy sauce.
Pour the dressing mixture on top.

You can add chilli oil and/or chilli powder in the dressing sauce.

Bubba's Chicken Rice Porridge



I usually make the Chinese style one.
This is the first time I made this dish.  Taste so good, we have to have second bowl for it .. LOL... 
I only add fried shallots, fried slices of wonton skin, and sambal oelek.

Egg Whites and Prawns



Egg Whites and Prawns

I have egg whites from Creme Brulee, so I decided to make this dish.  My invention,,yummoooo....

Ingredients:

Prawns
1 red chilli, finely chopped
3 garlic, finely sliced
5 shallots, finely sliced
2 tbsp Grape Seed oil
1 tsp curry powder
1/2 tsp cumin powder
salt and pepper
4 egg whites

Method:

Combine egg white with curry powder, cumin powder, salt and pepper, whisk well.
In a hot oil, add shallots sautee for about 30 seconds, once it starting to soften
add garlic and chilli, sautee until aromatic and shallots softens.
Add prawns, cook until color changed.
Add egg white, wait for a few seconds until egg white just cooked.
Then mix them well.
Ready to serve with steamed rice.

Chicken and Rice Dish


Ingredients:

300 gr chicken thigh fillets, cubed
5 shallots, thinly sliced 
2 garlic, thinly sliced
1 tbsp oyster sauce
1 tbsp soya sauce
1 tbsp Chinese cooking wine
1 tsp sugar
1/2 tsp sesame oil
2 tbsp grape seed oil

for garnish:
2 spring onion, sliced


Method:

Heat oil in a pan, add shallots, sautee until almost soft
Then add garlic, sautee for 1 minute
Add chicken, sautee until just cooked.
Add cooking wine, soya sauce, oyster sauce and sugar.
At this stage you can add a little amount of water, if you like.
Mix well and reduce heat to low heat, until chicken cooked and sauce thickens.
Ready to serve with steamed rice and garnish with fresh chopped spring onions.

Ingredients:

300 gr chicken thigh fillets
2 garlic, minced
3 shallots, minced
2 tbsp of fish sauce
1 tbsp of sugar
1 tbsp of oyster sauce
about 1/2 tsp of ground black pepper
2 stalks of lemongrass, inner part only, thinly sliced
1 long red chilli, sliced
1 spring onion
Oil


Method:
Mix all ingredients except oil, leave it in the fridge overnight.
The next day, heat oil in a pan, add chicken mixture and cook in medium heat until chicken cook.
Serve with steamed rice.

Semur Ayam

This is one of our favourite dish.


Chicken in Sweet and Sour Soup a la Mum

(Semur Ayam a la Mama)


Ingredients:
1 skinless chicken breast, cut to desired sizes
2 big potatoes, skinned, cut cubed
Tofu, sliced & fried
5 garlic, chopped finely
10 red onion, chopped finely
10 clove
1 nutmeg
1 cinnamon
1-2 tsp Tamarind puree
Soya sauce
Sweet soya sauce
Red big chilli, as desired
Small red chilli / chilli paddy, as desired (I only use 4)
1 tbsp oil

Directions:
1. Fried potato & tofu until light brown only.
2. Heat oil, add garlic & onion, sautee until fragrant.
3. Add nutmeg, clove & cinnamon, sautee until fragrant, garlic & onion until brown/cooked.
4. In different pan, disolved tamarine with water, and boiled chicken until cook.
5. Add potato & tofu.
6. Add sauteed garlic, onion, nutmeg, clove & cinnamon.
7. Add sweet soya sauce & soya sauce.

It should has sweet and sour taste, with lovely fragrant of spices.

Simple Laksa Noodle with Fried Tofu


Simple Laksa Noodle with Fried Tofu


This is fast, easy and satisfying (^_^)


Ingredients:
2 packages of Maggie instant noodle, chicken flavor
1 small can of coconut milk
1 package of Singaporean Laksa Paste
frozen Green peas
1 package of Fried tofu, chopped length wise
(you can get this from asian grocery)
fresh Coriander leaves
Salt & pepper, as needed
Oil

Method:
Take noodles of the packages, we don't use the seasoning that came with it.
Heat 2 tbsp oil, add laksa paste and cook until aromatic.
Pour in coconut milk and bring to boil.
Add noodles, frozen peas and tofu.
Bring to boil in medium heat until noodles are cooked.
Taste and add salt and pepper (if you like).
Garnish with fresh coriander leaves.
Ready to serve.


You can cracked 1 fresh egg at the bottom of the bowl and
pour the laksa noodle on top, the serve.


Prawns and Sweet Potato Fritters


Prawns and Sweet Potato Fritters

Ingredients:
1 sweet potato, grated
a handful of beanshoots, drained
about 300 grams of prawns, chopped coarsely
about 1/2 cup Corn flour
about 1/2 cup Rice flour
Salt and pepper
2 spring onion, finely chopped
1 tsp curry powder
1 tsp of garlic powder
1 egg
Oil


Method:
Mix all ingredients together.
Make sure the consistency is not too runny.
Heat oil in high heat, once heated, then turn the heat down to medium heat.
Take 1 tbsp of mixture into the oil.
Be careful not to burn it.
Continue with the rest.
Placed fritters in kitchen towel.
Then transfer them to a plate or bowl.

Serve with sweet chilli or Thai Nuoc Mam Sauce or just chilli sauce or...
just eat it as it is like my husband did ;-)

Ingredients:
2 eggs, beaten well
1/2 onion, diced
 1 garlic, minced
1 spring onion, chopped finely
1/2 tsp curry powder
1/2 tsp coriander powder
Salt and pepper
Oil



Method:
Mix together egg, spring onion, curry powder, coriander powder, salt and pepper. Set aside.
Heat oil, add garlic and onion, sautee until onion soften.
Pour egg mixture evenly and cook.
 
 
You can make it as fried eggs or scramble eggs.

How To Store Bean Shoots

Once you buy it, take bean shoots out from the package.
Fill your air-tight container with cold water.
Put the bean shoots in it.
Close the lid.

And... it will last for week.

Drum Stick in Black Bean Sauce
This recipe was from Better Homes and Gardens TV Show Last Year

I know the picture look horrible because the drum sticks look burnt.  It was because I am preparing this plus washing the rice and watching my 13 month old baby at the same time.  It turned out to be quite good, not disappointing ;-)


Ingredients:
Spray cooking oil
Salt and pepper
4 pcs of drum sticks
1/2 jar of Black Bean Garlic Sauce (picture as below)
2 tbsp of Oyster Sauce
2 heaps tbsp of Honey
Juice of 1 lime


Method:
Prepare your barbeque grill on high heat.
Spray drum sticks with oil, seasoned with salt and pepper.
Lay drum sticks on barbeque grill.

In the meantime, bring to boil below:
Black bean sauce, oyster sauce, honey and lime juice
Once boil and thickens. Switch off the heat.
Brush the sauce on chicken, turn itu occasionally until cooked.
