Same as salted this, this is one of my childhood food also one of my favorites,
especially when I don't have appetite

Mixed Lentil and Tuna Soup



Mixed Lentil and Tuna Soup


This dish inspired by James Reeson's Kimberly Soup.  That is his original recipe.

I only added mixed lentil (soaked overnight) and didn't use arrowroot and water mixture to thicken the sauce.

Here is what I made
 
Ingredients:
1 cup of mixed lentil, soaked overnight
400g tin tuna in oil
6 spring/green onions, sliced
1/2 cup of piquillo/wood roasted capsicum, use the oil too if possible
1 very small tin of anchovies, keep the oil
3 clove garlic, minced
2 eggs, beaten well
Salt and Pepper
Water, as needed
1 tbsp of Rice Bran oil

Method:

Heat a pan, add 1 tbsp of oil, sautee garlic until just fragrant, immediately add 1 very small tin of anchovies including its oil and piquillo including its oil. Saute for 1 minute further, break down the anchovies at the same time.
 
Add in tuna, a dash of pepper and about 1 cup of water.  Bring to boil.
Add well beaten eggs, mixed eggs in quickly.  Add water, if necessary. Bring to boil.

Taste to adjust the seasoning, add salt if needed.

Switch off the stove and Ready to serve.

Mum's Eggplants Salad

Ingredients:
2 Lebanese eggplants, chopped, boiled

Dressing:
2 tbsp of salted soy beans, rinse under running water
1/2 lemon, juiced
1 bird-eye chili, thinly sliced

Method:
Put boiled eggplants on serving plate.
Mix all dressing ingredients together and pour it on top.
Ready to serve, cold or warm :)

Barbeque Sauce Baked Tofu

This one is quite simple.

The Ingredients were only slices of tofu and barbeque sauce.
Cover tofu with the barbeque sauce, then grill them.

Easy Peasy Tasty Dish :)

Ingredients:

1 portion of cooked rice
about 1 cup of dried shiitake mushroom, soaked in water for 30 minutes
**you can use fresh shiitake mushroom, too**
2 cloves of garlic, minced
1-2 tbsp of light soy sauce
just a pinch of salt
ground white pepper

Garnish:

***if you like, you and also add frozen sweet corn kernels and baby peas, or any vegies**

This dish was inspired by Nyonya Fried Rice recipe I posted in July.

The only difference is I changed rice with vermicelli noodle, shredded cabbage, and carrots

Crispy Vegetables Fritters




Crispy Vegetable Fritters

It similar to Vegetable Fritters I made before but this one is a bit crispy.

So what you need is assorted vegetables, I used shredded cabbage, bean sprouts and shredded carrots.

Now for the batter, I usually use about 2 parts of plain/all-purpose flour and 1 part of rice flour.

For this, I used 2 parts of rice flour and 1 part of plain/all-purpose flour.
Then I add 1 tsp of ground coriander, 1 tsp of salt, 1/2 tsp of ground white pepper.
Instead of adding Fried shallots, I used finely chopped 2 spring onions.
Mixed all dry ingredients together and slowly add COLD water.
Mix cold water in with fork, it will help to dissolve the flour faster and easier.

Then heat your wok, add oil, once oil is hot, turn the heat to lower heat.
And start frying the vegie fritter per 1 tbsp until mixture finished.
Serve warm.
