Various Peanut Sauce Recipes


Whenever I say peanut sauce to a westerner(s),
they always think of Satay Sauce.

There are different kind of peanut sauce in Indonesia,
for satays, or snacks, salads dressings.

Here are 2 different kind of Peanut Sauce.
One for Sambal Rujak / Mix fruits with peanut and palm Sugar Dressing.
And one to accompany fried snacks like Indonesian Pastel,
Kroket (Indonesian Potato Croquette with minced and vegies filling),
or Meals like Gado-Gado (Indonesian mix vegies salad with peanut dressing)
or Ketoprak Betawi (Betawi/Jakarta Tofu and Vermicelli salad with peanut dressing)
or even Satay Sauce.



Sambal Rujak
(Indonesian Mix Fruits Dessert
with Peanuts and Palm Sugar Dressing)

The sweet, sour and a little bit salty taste
perfect for mix fruits dessert dressing.

Here I used fried unsalted peanuts.


About 4 Tbsp, crushed.


About 4 Tbsp Palm Sugar


3 Tbsp hot/warm water, mix with palm sugar,
until dissolved.


Add crushed peanuts into it,
1 Tbsp of peanut butter.


Crushed chili - as much as you like.


Add 1-2 tbsp of tamarind puree.


Taste then add salt - to taste.


If you make a lot, just freezed the rest.
So next time, you only need to defrost it :)






Sambal Kacang Serba Guna
Multi-Purpose Peanut Sauce
for Indonesian food


Sautee 1 - 2 cloves of garlic.


About 4 Tbsp of unsalted fried peanuts.


Add sauteed garlic and
bird-eye chilis.



Add 1 1/2 Tbsp peanut butter


Add crushed burning chili :D
Adjust or skipped the chili part,
if you can't eat chili.

Add 1-2 Tbsp of white vinegar,
and salt to taste.
Mix them all together.
Taste.



If you have left overs,
put it in a container, cover with cling wrap,
marked and freezed.

This sauce is ideal for snacks such as:

Pastel / Indonesian Empanada,

Bakwan Sayur / Indonesian Vegetable fritters,

Risoles (Indonesian Vegetables and Minced Crumbed Pancake,
or filled with Meat Ragout),

Kroket (Indonesian Potato Croquette filled with Meat Ragout),

and Satay sauce.

You can use this recipe for or Ketoprak dressing, just add crushed garlic,
and drizzle with sweet soy sauce.

You can also use this recipe for Gado-Gado dressing,
just add Palm sugar and 1/4 cup of coconut milk,
cooked all ingredients for sauce over low heat.
