Mixed Lentil and Tuna Soup



Mixed Lentil and Tuna Soup


This dish inspired by James Reeson's Kimberly Soup.  That is his original recipe.

I only added mixed lentil (soaked overnight) and didn't use arrowroot and water mixture to thicken the sauce.

Here is what I made
 
Ingredients:
1 cup of mixed lentil, soaked overnight
400g tin tuna in oil
6 spring/green onions, sliced
1/2 cup of piquillo/wood roasted capsicum, use the oil too if possible
1 very small tin of anchovies, keep the oil
3 clove garlic, minced
2 eggs, beaten well
Salt and Pepper
Water, as needed
1 tbsp of Rice Bran oil

Method:

Heat a pan, add 1 tbsp of oil, sautee garlic until just fragrant, immediately add 1 very small tin of anchovies including its oil and piquillo including its oil. Saute for 1 minute further, break down the anchovies at the same time.
 
Add in tuna, a dash of pepper and about 1 cup of water.  Bring to boil.
Add well beaten eggs, mixed eggs in quickly.  Add water, if necessary. Bring to boil.

Taste to adjust the seasoning, add salt if needed.

Switch off the stove and Ready to serve.
