My Bread Obsession: Cakwe and Cakwe Sauce


In Indonesia we called these fried bread: Cakwe.
In other countries, they would have Cakwe with milk,
we have them with Cakwe sauce, or with chicken rice porridge,
or with Lek Tau Suan (dessert / split green bean soup).

Cakwe is one of street food in Indonesia.
You can find it normally at traditional market.
Freshly rolled, stacked, lined and fried in front of you.
Serve with Garlic sauce that taste garlic-y, sweet and spicy (from chili).

Normally this Cakwe should be made with Baker's Ammonia powder (bubuk amoniak), which can be substituted by mixing equal parts of baking soda and baking powder.

I have tried many recipes without Baker's Ammonia powder
and I found this one that is really good which doesn't need 7 hours of proofing.


Here is the recipe:

2 1/4 C of flour - I used plain flour
1 tsp of salt
mix these two ingredients,
I used a stand mixer.



1 C of warm water
2 Tbsp of vegetable oil
2 Tbsp of sugar - i use raw sugar
2 tsp of baking powder
1 tsp of yeast - i use instant dry yeast
Put the rest of the ingredients in a cup.
I didn't stir.


Mix wet ingredients into flour and salt mixture.


I used dough hook.


Mix well for 5 minutes.


Until the dough come together and clear the sides.


Done mixing.


Ready for 2 hours proofing,
so cover with damp clean cloth
and leave it in a warm place
until double in size.


After 2 hours.


Punch the dough,
knead briefly on floured surface,
rolled about 1 cm thick,
cut out 2 the same size (you see I didn't).


Stack both together and put a mark in the middle on both sides.



Deep fried until golden brown on medium-low heat.


I made short cakwes, they looked like these,
these are the first 2:


If you'd like to be more efficient like me (read: lazy)
then cut a bit wide,


from there cut to 2 equal size,
mark on each side with chopstick
or knife like me.


Done, ready to serve with Cakwe Sauce.

Resep Saus Cakwe / Cakwe Sauce recipe:
100 ml of water
bird-eye chili, grinded (see below photo)
2 garlic, grinded
2 1/2 Tbsp of sugar
1/2 tsp of salt
1 Tbsp of white vinegar
Mix all ingredients together.

This is the ready-to-use chili I used.



All you have to do now
is just dip it in the sauce,
let the soaking process begin,
then sink it into your mouth.

Various Peanut Sauce Recipes


Whenever I say peanut sauce to a westerner(s),
they always think of Satay Sauce.

There are different kind of peanut sauce in Indonesia,
for satays, or snacks, salads dressings.

Here are 2 different kind of Peanut Sauce.
One for Sambal Rujak / Mix fruits with peanut and palm Sugar Dressing.
And one to accompany fried snacks like Indonesian Pastel,
Kroket (Indonesian Potato Croquette with minced and vegies filling),
or Meals like Gado-Gado (Indonesian mix vegies salad with peanut dressing)
or Ketoprak Betawi (Betawi/Jakarta Tofu and Vermicelli salad with peanut dressing)
or even Satay Sauce.



Sambal Rujak
(Indonesian Mix Fruits Dessert
with Peanuts and Palm Sugar Dressing)

The sweet, sour and a little bit salty taste
perfect for mix fruits dessert dressing.

Here I used fried unsalted peanuts.


About 4 Tbsp, crushed.


About 4 Tbsp Palm Sugar


3 Tbsp hot/warm water, mix with palm sugar,
until dissolved.


Add crushed peanuts into it,
1 Tbsp of peanut butter.


Crushed chili - as much as you like.


Add 1-2 tbsp of tamarind puree.


Taste then add salt - to taste.


If you make a lot, just freezed the rest.
So next time, you only need to defrost it :)






Sambal Kacang Serba Guna
Multi-Purpose Peanut Sauce
for Indonesian food


Sautee 1 - 2 cloves of garlic.


About 4 Tbsp of unsalted fried peanuts.


Add sauteed garlic and
bird-eye chilis.



Add 1 1/2 Tbsp peanut butter


Add crushed burning chili :D
Adjust or skipped the chili part,
if you can't eat chili.

Add 1-2 Tbsp of white vinegar,
and salt to taste.
Mix them all together.
Taste.



If you have left overs,
put it in a container, cover with cling wrap,
marked and freezed.

This sauce is ideal for snacks such as:

Pastel / Indonesian Empanada,

Bakwan Sayur / Indonesian Vegetable fritters,

Risoles (Indonesian Vegetables and Minced Crumbed Pancake,
or filled with Meat Ragout),

Kroket (Indonesian Potato Croquette filled with Meat Ragout),

and Satay sauce.

You can use this recipe for or Ketoprak dressing, just add crushed garlic,
and drizzle with sweet soy sauce.

You can also use this recipe for Gado-Gado dressing,
just add Palm sugar and 1/4 cup of coconut milk,
cooked all ingredients for sauce over low heat.

Freezing Pizza Dough



Now that I know how to make pizza dough,
I will always make my own pizza dough.

This pizza dough recipe is very nice,
it can be rolled very thin too.
So we can have a thin and crispy Italian pizza bread.
It is what my family like, thin and crispy pizza bread.

This morning I asked my son if he'd like pizza for after school.
He said yes, so I made 1 x recipe, which I know can make 2 large
thin and crispy pizza bread.


I let it rise until double in size like in this photo:

Punch the dough, let the air out,
divide the dough. I devided into 4 equal size.
1/4 dough is enough to make 1 small pizza for my son.
Just for him, so I don't need to get fatter and fatter
by eating the left overs (haha!)


Get enough cling wrap for each dough.
Spray it lightly.
Put the dough in the middle

The wrap each tightly.


Put them in a freezer bag.
Mark it.
Into the freezer.


Done :)



My Bread Obsession: Homemade Pizza Bread


I saw this recipe behind Bread and Pizza Flour package.

There are 2 recipes, one of them is Traditional Pizza Dough.

My son loves eating pizza,
he said "it's like Ninja Turtle, Mummy.  They love eating pizza".

In the past, I always buy pre-made pizza bread,
you just add topping - bake - done!

Since I start making homemade bread,
I was keen to make different kind of bread,
here is one of them, Pizza Bread.

Here is the Recipe from "Lighthouse" brand of Bread & Pizza Flour:

Ingredients:
1 1/2 cups of bread flour
1 tsp of salt.
1 tsp of dry instant yeast
160 ml of lukewarm water
2 tsp of olive oil (I used extra virgin, robust flavor)

Method:
Combine flour and salt.
Make a well in the center.
In separate bowl combined yeast, water and oil.
Pour it in the centre of flour and salt mixture.
Mix it well, add 1-2 tbsp of flour if needed.
Knead well, rest until the dough double in size.
Roll the dough out, top with your favorite toppings.

Preheat oven 220 F / 200 C fan-forced.
Baked for 10-15 minutes.



Here are some of pizzas I have made:

Risoni with Hidden Vegetable pasta sauce,
sausages and cheese.






Tuna, Risoni with hidden vegetable pasta sauce,
feta and mozzarella cheese.






Sweet potato, feta, mozarella cheese
and spinach.


So if you have time, please make it yourself.
It is cheaper and you will be a little bit happier :)
