My First Ever: Coconut Macaroon Balls




Coconut Macaroon Balls

This recipe is also from "Sweet Delights" Magazine.
I did not put as much sugar, I put about 100 gr and that was already sweet for me.


Ingredients:
100 gr egg whites
240 gr sugar
100 gr dessicated coconut
35 gr almond meal

Method:
Preheat oven to 160C.

Using a double boiler, whisk egg whites and sugar until sugar has dissolved.
Pour into mixing bowl and continue whisking until stiff peaks form.
Fold in dry ingredients.
**I found this method is a bit difficult because after I moved the mixture into a bowl and whisked it with electric mixer, it only ribbon formed.  Next time I would like to try without double boiler, see if it works.**

Using a star nozzle, pipe onto lined baking trays.  Bake for 10-12 minutes.
**I just form balls with 2 teaspoons**
